Canned beans? (Or you could cook your own if you're awesome)

L goes crazy over the frozen corn from Costco. I just heat it up for like 20 seconds to defrost it and then she can't shovel it in her mouth fast enough

Alrighty, so I tried making something that I think I could send to school for lunch today: Ham and chicken (deli meats), sliced cherry tomatoes, baby carrots, whole wheat crackers, and sliced up cheese stick.

DS: Ate just about everything but was slower to eat the meats or tomatoes.
DD: Didn't eat the meats, carrots, crackers, or cheese. Gobbled up the tomatoes first thing.

Suggestions to sneak protein in on my littlest picky eater??

Ham, fish, chicken nuggets, veggies, cut up fruit, hard boiled egg are my go to easy things to pack. French toast cut in strips, he'll eat it cold. Mac and cheese is his favourite. Slices of cheese.

If we have leftovers then that is what gets packed.

I have a hard time being creative and like to cook up a batch of something at the beginning of the week, so his lunch is pretty much the same all week long.

I think my concern is that if I try to send anything hot/warm they might not serve it? Obviously this is a question for the teacher but my understanding is that they take the lunch boxes, help the children put the food on a plate, then have the children take plate, utensils, drinks, etc to the table and have them set their own table.

Anyone have any pictures they want to share of what they send in their kids lunch? I'm a visual learner ;)

Quesadillas, pizza, chicken nuggets (DS eats all cold-I think he's just used to it) when I have time I pack a thermos and put mac and cheese or leftovers in it. Burritos, sandwiches, waffles or pancakes and cream cheese/jam.

When i worked in a toddler room a lot of parents would send leftovers from the night before in one of these. If you heat them in the microwave before you leave they will stay warm-ish until lunch time.

Chicken nuggets or strips cold are great. Any fruit that is in season. Green beans, carrot sticks, peas. Pinwheels, cheese, crackers, rotisserie chicken, rice balls.

Mrs. Bee posted some great blog posts on bento inspiration. I find bento to be so easy if you don't try too hard. In my mind it's just different foods in different sections of a lunchbox.

Evan goes nuts for meatballs, and he usually eats them at or just over room-temp. I like them because I can mix tons of spinach into them.

We usually give E cut up cheese sticks, fruit, and yogurt as his staples. After that, it gets harder. We usually rely on the "grilled" frozen chicken strips, meatballs, grilled cheese, or maybe leftovers. I'm going to try making some quesadillas and see how well they freeze in little strips to defrost overnight. Thankfully, he doesn't mind eating refrigerated food.

I have a week to put together some ideas for two toddler lunches - including testing out their willingness to eat it - and I'm afraid that Pinterest is just giving me too much food for thought. So I'm turning to the boards :)

Where do you find you inspiration for toddler lunches?

Here's the criteria:
- can't need to be heated (but can be chilled)
- has to be easy to self serve (not a lot of little pieces to combine)
- has to cover most if not all of the food groups
- can't include peanut butter

So far I've come up with veggies, hummus, crackers, lunch meats, fruits, and maybe something like cheese cubes or stick? Or maybe some plain pasta with peas. Thoughts?
