<description>&#60;p&#62;Pizza quesadillas - sauce, mozzarella, pepperoni or sausage or chopped up meatballs.  With salad and fresh fruit.  &#60;/p&#62;
&#60;p&#62;Fresh tortellini with pesto, a splash of cream (or  blob of cream cheese or sour cream), cooked chicken or fully cooked chicken sausage, and peas or cherry tomatoes or baby spinach tossed in at the end.&#60;/p&#62;
&#60;p&#62;Tapas style dinner is easy - good bread, cheese, ham or salami, fresh melon or other fruit, hummus or other dips, crudités,&#60;br /&#62;
steam a bag of edamame pods, sparkling lemonade for the kiddos, wine for the adults.&#60;/p&#62;
&#60;p&#62;On the side, this time of year I like to pre-make hearty salads that last a few days like cherry tomato, cuke, garbanzo beans and parsley tossed in lemon juice, olive oil, salt and pepper.  You can take the base and add other stuff to it (pasta, quinoa, olives, chicken, salami, feta), or just dump it on greens or eat as is.

&#60;p&#62;I would do baked chicken thighs and vegetables.  Prep the whole thing in a pan, bake at 400 for 20 minutes.  Side of rice (Veetee is great and takes 2 mins in the microwave).
