<description>&#60;p&#62;We eat either PB&#38;amp;Js (sometimes Mommy has a cheese quesadilla instead) or a snack plate year round. DD doesn't have time for me to cook her lunch lol. I do like to mix up the snacks a lot, but I try to always have a protein, two veggie/fruit, and one extra thing (carb or treat). I usually also try to have stuff go together, so we will do black beans/cheese/salsa/sweet peppers/tortilla chips or ham slices/swiss/baguette/leftover green beans/ berries, etc.

<description>&#60;p&#62;We mostly do leftovers.  In the past week DS has had:&#60;/p&#62;
&#60;p&#62;Mini corndog bites from the toaster oven&#60;br /&#62;
Leftover pasta with meat sauce&#60;br /&#62;
Leftover Mac n cheese (that I had cooked shredded veggies in)&#60;br /&#62;
Leftover fried rice&#60;/p&#62;
&#60;p&#62;Always with fresh fruit and milk.&#60;/p&#62;
&#60;p&#62;We've also done:&#60;/p&#62;
&#60;p&#62;Pizza quesadillas (sauce, mozz, pepperoni or meatball pieces).  For bigger kids you can do them without the sauce and serve it on the side to dip.  My kid doesn't like regular quesadillas, go figure.&#60;/p&#62;
&#60;p&#62;Nuggets in the toaster oven, fresh steamed corn on the cob (takes no time in the microwave), and watermelon.&#60;/p&#62;
&#60;p&#62;When I nannied the kids liked anything where you made a regular meal a little different.  &#60;/p&#62;
&#60;p&#62;A big favorite was &#34;kiddie sushi&#34; - it's basically small pinwheels made of tortilla, spread with hummus or guac or cream cheese, and filled with strips of cheese and deli meat and shredded veg and then rolled up and sliced into sushi bites.  &#60;/p&#62;
&#60;p&#62;They also liked PBJ quesadillas - basically just put the PBJ on tortillas or flat bread and cut into wedges.  Or PBJ &#34;tacos&#34; where you stuff a pita pocket with PB, jelly, and apple slices.  Or banana &#34;hot dogs&#34; where you spread hot dog buns with PB and honey and stick a banana inside like a hot dog.

I'm trying to think of lunch ideas that are super simple and summer friendly so that I don't have to have the oven on, or spend a lot of time in the kitchen.
