<description>&#60;p&#62;If I have the oven on, I roast veggies too.  Sometimes I get fancy and toss them with breadcrumbs and parmesan, sometimes just plain with olive oil and salt.&#60;/p&#62;
&#60;p&#62;I get in food ruts, I was just saying to my husband that our veggie side dishes are getting boring.  I need to do corn salsa again.

<description>&#60;p&#62;I throw a couple of cans of great northern beans, tomato sauce, and some frozen spinach in to a pot and cook it for twenty minutes or so, then serve it with lemon juice and Parmesan cheese on top. It's yummy!

<description>&#60;p&#62;I'm also on the roasting bandwagon.  I roast all kinds of veggies.  Just toss w/ olive oil, salt, pepper, and any other seasoning of choice.  Roasting seals in the flavor, whereas I find steamed or boiled veggies to be really bland.  &#60;/p&#62;
&#60;p&#62;I'm also a big fan of sauteed kale, but DH hates it.

<description>&#60;p&#62;We roast veggies a lot - roast them on foil and clean up is a snap. &#60;/p&#62;
&#60;p&#62;We also quick cook up green beans in a very hot pan with a little olive oil, s&#38;amp;p and red pepper flakes. They get a little crispy on the outside and are nice and spicy.&#60;/p&#62;
&#60;p&#62;We also try to make salads with a variety of mixed greens, especially dark greens. Kale, spinach, bok choi, mustard greens, baby winter greens, etc.

You can take almost any veggie--carrots, broccoli, cauliflower, asaparagus, squash, etc, toss it in some olive oil and salt and pepper, and roast it for 30-40 minutes. Super easy, and no recipe required.
