I always double the recipe and keep in the freezer. I don't add the walnuts

Unfortunately, the link to the spinach muffins doesn't exist anymore but if you google it, you should find something similar.

Also, I got a bunch of muffins this weekend at Costco from Garden Lite. They're made with zucchini and carrots. The boys love the chocolate chocolate chip ones!

The top veggies for my kids are cooked carrots (they really prefer them cooked in chicken broth) and baked potatoes. The little one enjoys raw tomatoes.

There are a lot of other veggies they will eat if they are in soup form. I make a veggie-heavy chili a lot because my older daughter, who swears she hates tomatoes, will devour chili! She also really enjoyed minestrone. :silly:

I also finely dice veggies to put in pasta sauce and stuff.

Try stuff like vegie sausages (breadcrumbs, cheese, herbs, grated vegies, egg). It may be a matter of cutting down on carbs and making meals that are more incorporated meat and veg (such as currys, stews, shepards pie - using vegies, soups, ploughmans platters) and get rid of bread/rice for some meals altogether.

DS hates veggies as well, but for some snacks I give him a little cup with sliced beans, in it or peas or corn kernels - he eats these raw.

@Foodnerd81: ah! Kids are crazy. But I’m happy they gave it a try!

My kids are moderately picky eaters (as long as I abide by certain rules- no sauces, not spicy, etc). We are veggie purists over here and stick with steamed broccoli, cut up cucumbers/carrots/peppers, roasted sweet potatoes and others, and recently I’ve had good luck with French beans. We did green beans before and no one liked them, but the thinner version French beans are a hit!

So after all my complaining about this yesterday, tonight I had the energy to cook and a weird mish mosh of things to use up because I was away this weekend and didn’t have time to shop and meal plan. I made salmon patties, roasted carrots and potatoes, and quinoa- and they freaking ate it. It took some cajoling to get them to try it but they both actually ate it. I couldn’t believe it. Then they each ate half a container of strawberries after. One day they complain about the macaroni and cheese I serve them, the next they eat salmon and quinoa.

@SweetiePie: right, cucumbers and carrots are fine, I just want to expand those! Plus I get sick of the same things too. Unfortunately the 5 yo also won’t eat tomato sauce. She puts a little on homemade pizza but never on pasta.

@brownepiano: I also try to do what gingerbebe has said about the serving container for the pre chopped veggies! That’s what got me started. And I find myself surprised by how quickly we go through what seemed like a lot of cut veggies, then I realize that is definitely a good thing!

My kids will only reliably eat peas, carrots, bell peppers, and mushrooms. The peppers and carrots I try to keep chopped and in a serving container like gingerbee said she does. That way I can pull it out for lunch or supper when I don't have anything else.

Other than that we do roasted broccoli (which the 5 year old hates but gets to eat anyway) spinach muffins, and roasted sweet potatoes. In the summer they eat tomatoes straight off the bush. I've also made my own broccoli tots and they are really easy! I hide cabbage in things like dumplings and zucchini in soups and muffins.

Edit to add- we also like fry bowls and Curry for including a bunch of random veggies easily. The kids aren't entirely sold on curry but they like the toppings and rice so they'll try it.

@Foodnerd81: My 4.5yo is still better than most with veggies, but his interest has definitely declined. I think that starting school has been part of the problem. I think he might hear other kids say things like “I don’t like broccoli” and he then gets it in his head. He’s SUCH a followe and repeater, it’s going to be a problem as he gets older. He’s always loved broccoli but now he’ll say he doesn’t like it and it was practically over night.

Have you tried edamame in the pods? He loves that. It’s fun to squeeze them out. I just buy frozen and steam then sprinkle with salt.

And I chop up veggies to put in spaghetti sauce. Spinach and zucchini both work well becuase they resemble the basil specks of green that are already there.

And tbh I don’t think raw cucumber and carrots is a bad thing. If they are eating those well, you aren’t in a bad spot at all.

Oh and mini sweet peppers. My 4.5yo loves those.

A little different, but I made pizzas with cauliflower crusts last night. We topped them with a natural, low carb tomato sauce and veggies like bell pepper and mushrooms, as well as low fat cheese. My 3 year old loved putting her own pizza together and had no idea I was sneaking in extra veggies.

@Anagram: yup, I do buy that or the south land brand. The only problem I have is usually I want to mix like half a box in but it’s hard to cut it. DH and I will eat that on its own as a side too because we love butternut squash!

@foodiebee: my kids won’t eat mashed potatoes! Or almost any white potatoes besides French fries. Mashed potatoes are one of my favorite foods! And roasted potatoes with herbs? Delicious! They won’t eat them. They actually eat carrots way better than potatoes, which is good at least.

@Foodnerd81: Buy this, in your frozen section. Then you just microwave it for like 4 minutes and it's ready to throw in. I also put it in certain soups for some nutrition. https://www.birdseye.com/product/winter-squash-cooked/

Roasting veggies is super easy and my go to. i.e. roasted root veggies (potatoes, sweet potatoes, carrots, parsnip, mixed in with some currants), roasted broccoli with lots of garlic, roasted eggplant, etc. I think carrots take a bit of spice well, i.e. a dash of cumin. I'll also make a variety of veggie soups, with some beans or chickpeas to make it more filling.

My son absolutely refuses broccoli, but he liked a soup of broccoli pureed with whole milk and lentils to sweeten it up (and also a bit of onion, chicken broth, and some mace for flavoring). Super easy, and I thought it was pretty tasty as well.

For breakfast I'll make smoothies and sneak in some spinach or other veggies. DS has issues with the sippy cup still, but I'm hoping this will ultimately be a good way to sneak veggies into his diet. It works for my husband!

@pachamama: definitely don’t feel like a failure! When I say my kid eats these things, it’s usually a bite or two not like he’s scarfing down salads and veggies at all meals. Sometimes he hates it all and won’t eat anything even stuff he likes ! But I don’t care anymore now he’s older. I just keep putting the stuff on his plate and whatever.

What about mixing grated carrots into mashed potatoes? Not the matchstick carrots you buy already cut, but grate them on a box grater so that they're ultra thin. Matchstick ones would be crunchy still. Basically just looks like shredded Cheddar cheese when you're done!

When I was a kid, we loved broccoli or peas mixed into alfredo pasta dishes.

@pachamama: well I needed to write the post because it feels like I’m failing in this department too. And even the fact that my kids both WILL eat raw veggies- I can’t get my act together to have them cut up and ready for dinner most nights. And you’ll notice most of the proteins I mentioned are prepared frozen items. 🤷🏻‍♀️

@pachamama: Awww, you are in no way a failure. Kids are just picky and some have sensitive tastebuds (or are "supertasters"). Many also have issues with texture which is why a child may love raw veggies versus steamed (crispy versus soft/mushy and vice versa). All one can do is offer a variety of things for children to "try" in an effort to immerse their senses into and/or to make modifications of favorites to add nutritional variety (smoothies with veggies snuck in, mashed potatoes with blended cauliflower, carrots, or broccoli added in, etc.) Your child's tastes is in no way reflective of how you are as a parent.

My incredibly picky eater will also eat frozen peas - it's funny to me how many kids do this! She also eats raw spinach leaves because she thinks she's getting away with something...she'll sneak them off the counter while I'm prepping a salad and hide under the table to "eat the leaves Mommy forgot to rake." But that's about it when it comes to green stuff for her. I hide the rest in smoothies, and even then it's like she knows and won't drink the whole thing!

My younger one (almost 2) will eat any veggie and I'm counting my blessings as long as it lasts. My favorite go-to easy sides are roasted broccoli and cauliflower. We also made a lot of soup, and I load those up on veggies when I can.

I made this citrus green bean dish last night and it was a hit with my kid who likes veggies: https://www.health.com/health/recipe/0,,10000001046853,00.html.

@Foodnerd81: My DD has a big mouth [for her displeasure] at the table and her opinions influence her her brother (* He looks up to her and copies everything). We were having the same issue as you have with your 5 and 3 year old. In order to temper my DD as she rudely states, "I didn't want the meat today" or "I don't like the jelly on my peanut butter and jelly sandwich...", DH & I have made a rule for nice words only at the table - no complaints, only compliments. Effectively, it has worked (and is a bit funny to listen to DD try a compliment items she REALLY wants to complain over!). We also have a 3-item list rule. My children are each allowed 3 items that I will not feed them since they added it to an "ick"list (* posted on the fridge). If I serve something one doesn't like, he/she can remove one of the 3 items on the list to add the new item BUT only after eating the item at the meal! An example: DD has coleslaw, mac-n-cheese (weird kid!), and pepper Jack cheese on her current list. If I serve brown sugar carrots and she dislikes them, she must eat them (with no complaints) first before taking the cheese off of the list to put the carrots on. All bets are off for whether or not I may serve the item that came off the list (although if I know a child REALLY doesn't like something, I do try to avoid it as I'm not cruel!😉😂). The list has worked amazingly well for both kids and the compliment rule has worked to keep both kids eating what is served with little issue.
Good luck :goodluck: and I hope my suggestions help.

@Foodnerd81: oh do they have a favourite dip? my 2.5 year old doesn’t love veggies but will eat a lot of raw veg dipped in ranch. And even likes Cesar salad.

@charm55: my little one eats red peppers like crazy. And she has literally eaten a cucumber whole, like I handed her the whole thing and she just chomped away. Big sister not so much.

My oldest will pretty much eat anything but my youngest is pickier. I’ve found the only way to get her to eat things is to just keep putting it on her plate over and over and over again. Eventually she will at least try it. Literally I have put carrots on her plate for at least two years and last night she finally ate them.

Otherwise their favourite veggies are snap peas, bell peppers (my oldest eats them like apples... weird), sweet potatoes, butternut squash and cucumbers.

I can put pretty much anything in a smoothie (spinach, kale etc) and even my fussy younger DD will devour it.

@muffinsmuffins: ah- yeah that sounds yummy to me but my kid refuses even delicious baked Mac and cheese with bread crumbs. Sigh.
