&#60;p&#62;Our go-to is marinate in Italian dressing and throw in the oven. We also chop chicken breasts up and throw in a pan with a little olive oil and sesame oil. Once they are nearly browned, I add soy sauce. Then we eat over salad or with fried rice.

add about a cup of frozen spinach and any other veggies - broccoli, mushrooms, zucchini&#60;br /&#62;
add a jar of your favorite red sauce&#60;br /&#62;
serve over pasta - we like tortellini but even penne is great&#60;br /&#62;
sprinkle with mozzarella

<description>&#60;p&#62;I like to do a quick marinade of taco seasoning, a cheap beer, and lime juice for 30 minutes on chicken breasts pounded to be even thickness.  Then grill or broil.  Can be eaten on salads, as fajitas or tacos, or just with some Spanish rice and beans.

<description>&#60;p&#62;Baked parmesan chicken-&#60;/p&#62;
&#60;p&#62;Pound chicken breasts flat into thin cutlets or butterfly (you can do thicker, but it's better if they are thin).&#60;/p&#62;
&#60;p&#62;You're going to put them on a baking sheet/baking pan,&#60;/p&#62;
&#60;p&#62;Make the following mixture to spread on top of each chicken breast:&#60;br /&#62;
- Low fat mayo&#60;br /&#62;
- Low fat/fat free PLAIN greek yogurt (I usually mix yogurt/mayo half and half but use what you have)&#60;br /&#62;
- Salt &#38;amp; pepper&#60;br /&#62;
- Parmesan cheese&#60;br /&#62;
- Italian seasoning&#60;/p&#62;
&#60;p&#62;Put a large sized blob covering each chicken breast. Then sprinkle Italian breadcrumbs over the top. Bake at 350-375 till cooked through.&#60;/p&#62;
&#60;p&#62;This is pretty easy and tasty, and usually pretty quick if the chicken breasts are thin enough!

&#60;p&#62;Last night I cubed chicken, tossed with lemon juice, garlic, pepper, and herbes de provence, sauteed it, then tossed it with cooked orzo, green beans and mushrooms, and made a quick pan sauce with lemon juice and chicken stock to mix in. So yummy!
