@locavore_mama shared some great breakfast recipes & ideas with me to make ahead & freeze!

here's the variation i liked because of the green peppers & onions. i just put them in individual portions in the freezer and pulled out the night before for DH to reheat & serve with toast.

@mrs. bird: Raw, but out of their shells. I had a dozen or so eggs that I didn't know what to do with (I had bought them to bake, but didn't get around to it). So off to google I went, where I discovered that you can freeze eggs if you take them out of their shells! I did 2 eggs, beaten, per freezer safe plastic container. I used them in baked goods and no one could tell they weren't fresh eggs!

Oh man, i use eggs all the time, ha.

Hard boiled and deviled eggs, egg salad (which i think is gross so I never make it), hard egg sandwiches (cheese, bacon, sliced hard boiled eggs), egg muffins, quiche...any kind of souffle. You can use up a ton of egg whites in a souffle. So light and fluffy, too.

I really liked deviled eggs, though. I'd probably also make a batch of banana bread with coconut flour (coconut flour is crazy absorbent)

Ice cream and quiches use lots of eggs, and you can freeze both for later! Also creme brulee, custard, cheese cake...

Crustless mini quiches in a muffin pan! http://smellslikebrownies.com/2012/03/12/crustless-mini-quiches/

I love these for breakfast on the run - freeze individually, then pop them in the microwave to defrost as you need them..

@Happygal: i've never made a strata before. egg-cellent, thank you! ;)

@mrs. wagon: DH asked me to make egg salad! i hate the smell of hard boiled eggs, so i never make it, but i think i'm gonna. of course he was away for half of last week when i really needed him around to eat some eggs, haha. normally, we never would have a problem going through eggs! i think i'll make a bacon and spinach quiche and maybe a broccoli and ham one to freeze, in my head broccoli will freeze better than the spinach one :)

A quiche will use up at least 6 of those eggs! I did a spinach and kale quiche recently that was enjoyed by the whole family...

omg I love eggs (and what a great deal!!). If I were you I'd boil them and make a ton of egg salad. Love me some egg salad sandwiches. I made an egg casserole a while back and I didn't like it so I won't post that recipe ;) How about quiche?? You could freeze them for super quick dinners later!

Google strata recipes--there are a lot of tasty variations out there! I like going basic with eggs, bacon, and cheddar cheese. I've also done artichoke and goat cheese. That will use up about a dozen eggs for you!

so i have 3 dozen eggs in my fridge i need to use up before they expire on the 30th. a week ago target free range organic eggs were ringing up at $1.59 and there was a coupon and a cartwheel offer, needless to say, i went overboard buying eggs!

i need some egg inspiration... egg filled recipes you love would be appreciated :)
