<description>&#60;p&#62;@Coco Bee:  This can I had was a medium hot red sauce (Goya, I think, but I could be wrong), so they were red enchiladas and not white/sour cream ones. I don't know why I did it, I prefer sour cream ones! I don't think I've ever used canned cream soup...I find it too salty, and I love salt.

<description>&#60;p&#62;@lydg:  I usually use flour tortillas for quesadillas, burritos and soft tacos (DH prefers them). My FIL has this neat thing he does which involves putting a corn tortilla into a mini deep fryer for a minute or two...not long enough to become a hard shell, but this amazing hybrid...it's puffy and just a little crispy and chewy all at the same time...he uses it as taco shells.

<description>&#60;p&#62;i always make enchiladas with corn, but stuff like quesadillas i make with flour. i put a little cooking oil in a pan on the stove and dip the enchilada in the oil to soften up before filling and baking.  the only true way to make enchiladas!

<description>&#60;p&#62;@Coco Bee:  Haha sorry I missed your comment, glad you got a recipe! Mine were okay--filled with black beans, corn, green bell peppers, onions and cheese--but nothing special. I think they would have been a lot better if I'd been feeling less lazy by the time I started dinner and made my own sauce instead of using the canned stuff. DH ate a ton, though. &#60;/p&#62;

<description>&#60;p&#62;I couldn't have anything except corn, it is tradition and the tastiest!&#60;/p&#62;
&#60;p&#62;I make my grandma's sour cream enchiladas- filling: a small tub of light sour cream, a can of cream of chicken soup, chopped green onions, a can of diced chiles, soften up corn tortillas in a little hot oil, add filling, shredded chicken, and shredded colby jack cheese, roll up in a casserole dish, and cover with the rest of the filling and more cheese.  Bake at 350 for 45 min.  YUM!

My grandmother and father would be horrified if I served them enchiladas made with flour tortillas, but there seem to be a lot of people (on the internet at least) who prefer to use flour. &#60;/p&#62;
