@MRSSCOTTISH - That's helpful - it seems that many people aren't successful with GF bread from scratch. Honestly, I just want to eat cleaner and less processed, so I think I'd like to see how I feel if I eliminate gluten.  I don't have any health ailments that are contributing to my decision.&#60;br /&#62;
@HOTCHILDINTHECITY - Thanks for the website recommendations!  I'm interested in the paleo concept, but I also try to eat minimal animal products, so I suppose that wouldn't really work (based on what I know about paleo), haha. :)&#60;br /&#62;
@LILYOFTHEWEST - I don't have any suspicions about having celiac or a gluten sensitivity - just trying to cut out processed foods and eat more plant-based. Thanks for the info!&#60;br /&#62;

<description>&#60;p&#62;If you think you might have celiac disease, I would encourage you to get tested now before you stop gluten; the test doesn't work if you've been doing a good job of abstaining from gluten. &#60;/p&#62;
&#60;p&#62;Good reasons to know if it is celiac:&#60;br /&#62;
- If you have a specific diagnosis of celiac disease you can deduct the (sometimes significantly) increased cost of GF products as medical expenses on your taxes.&#60;br /&#62;
- If you have true celiac disease there's pretty good evidence to support the importance of avoiding even tiny tiny trace amounts of gluten -- they can lead to permanent bowel damage and increase the risk of bowel cancers. If you find that you have non-celiac gluten intolerance (or just have a fussy digestive system that is happier without wheat) you can probably ignore cross-contamination concerns and even &#34;cheat&#34; from time to time. &#60;/p&#62;
&#60;p&#62;I&#34;m not GF, but, my sweetie is. In consequence, I eat a lot less gluten since we don't really have it the house. I haven't noticed any change in how I feel eating more/less.

<description>&#60;p&#62;I found out I had a gluten allergy last March. Dh and I had to do a lot of research and spent lots of time in the the grocery isle but now it is much better! The only time it is hard for me is when we go out as I am limited (I am also allergic to nuts and am a vegetarian) I love udi`s products as bread alternatives. I have toast every morning.&#60;br /&#62;
I am noticed a significant change in every part of my since going GF. What is making you want to change???&#60;br /&#62;
I did not notice significant changes until probably a month after cutting it, granted I still was eating some hidden gluten that I never realized as we were just learning!

<description>&#60;p&#62;I also never had any luck making my own GF bread.... Try Glutenfreegirl - she has a bunch of recipes... There are a few other blogs but I can't think of them now - I could come back and post. &#60;/p&#62;
&#60;p&#62;Look out for hidden glutens.... Soy sauce has wheat! And avoid oats unless gluten free oats, Bobs Red Mill makes them, among others.&#60;/p&#62;
&#60;p&#62;I, personally, avoid garfava/garbanzo flour items as I think it produces a weird taste.... Which is strange because I love garbanzo beans, hummus... But something about that flour tastes weird. In case you notice that in your GF journey, that could be the culprit. &#60;/p&#62;
&#60;p&#62;Good luck! I've been GF for 7 years and its tough at first then you barely think about it! :)

I have actually found more success from buying packaged &#34;just add the water and egg&#34; gf bread kits. I buy 2 varieties of organic gf ones I have found at our grocery store. I can add cheese, raisons, whatever I want to them.
