Casseroles, then eat for a bunch of meals. Meat+salad or meat+steamed veggie. Hard boiled eggs and toast...breakfast. I ate a lot of fried eggs on toast on solo nights. Sometimes i just did a protein shake, too, if i was short on time for dinner

Roast veggies and fish. Sandwiches. Salads. Crock pot recipes. A big pot of soup that you can eat all week. I mainly cook after the kids are in bed because I am busy/out with them during the day.

DH travels a LOT for work and were in the middle of an almost 2.5 week stretch. He's home for one night then hitting the road again so I'm off to get some grocery shopping in.

I've been getting by on peanut butter sammiches, Pizza Rolls, and soup, but am looking to...get a few more options. What're your go-to snacks/meals that are fast and easy to make and eat (I have an almost 11 week old who gets especially fussy around dinner time so I wear her a lot)?
