We do scrambled eggs in the microwave. Basically just eggs and milk and whatever spices you like. I microwave for 30-45 seconds, stir, another 30-45 seconds and it's done. Use a small ramekin or even a coffee mug. For the last few seconds you can also top with cheese :-)

I love the homemade breakfast cookies that were on the blog here. The ones with only oats, banana, applesauce, and whatever dried fruit and nuts you want to add:

My kids love these when we're in a rush - http://www.whatsgoodattraderjoes.com/2011/04/trader-joes-organic-lowfat-yogurt.html. I just stick a straw in it and off we go.

We also do belvita breakfast cookies, and Hawaiian bread rolls.

oatmeal muffins (kind of like oatmeal to go)
breakfast sandwiches (frozen)

Will they let her eat / finish breakfast when she gets there?
Our stand bys are cereal (obviously), muffins, pancakes and waffles in variations of blueberry, bananas and oats so it's not just all carbs. I usually make them using no flour at all, on the weekends then freeze leftovers. Mini quiche (made in muffin liners). Oatmeal is relatively quick to make as well. I'll pre-soak the steel cut oats overnight then start it first thing and it'll take less than 10m to cook. I've made oatmeal bars in the past but we're not big fans of the mushy texture.
Everything but the fresh oatmeal freezes well.

DH and I tag team to get both girls ready then have them set up for breakfast. When they're eating breakfast we get ready, take the dog out, feed her, make coffee, get everyone's bags ready, etc. Mornings are pretty freaking crazy!

I love making at big batch of muffins and freezing them. Current favorites are Rocket muffins out of the Macrina cookbook and oatmeal, flax, and blueberry from Food 52. I also make oatmeal the night before and just microwave it in the morning (I'm not a huge overnight oats fan, but that's an option too). I know people who make breakfast burritos and freeze those too, but I haven't tried. Oh and homemade pancakes and waffles freeze well too. Smoothies are pretty quick too, especially if you already have the frozen fruit/veg portioned out and packaged to grab in the morning and throw in the blender.

My big girl starts Pre-K this year (all day at the public school) and will no longer have a breakfast provided. Our mornings are chaotic and she finds way to make everything take too long. Any great ideas for quick breakfast at home? Our drive to school is short (5 minutes) so even eating in the car will be challenging.
