1. Take a frozen bag of green beans and toss them in salt, pepper, olive oil, and garlic powder and roast along or underneath and meat you are roasting. This works great with pork tenderloin or anything that roasts for about 30-40 minutes at 400-ish degrees.

2. Hot olive oil with some garlic and chili flakes tossed in a pan with any kind of dark green like kale or chard with a dash of salt and if you like, a squeeze if lemon or a handful of cherry tomatoes.

3. Chop a bucket of red peppers, squash/zukes, onion, and broccoli or carrots (think steakhouse veggie medley) at the beginning of the week and just stir fry some every night with olive oil or butter, garlic powder, salt and pepper, or any other combo of herbs you want. I can use this mix as an easy side, or stirfry, or add to pasta, or roast.

I love to roast cauliflower and brussel sprouts. I steam brocolli and then add some butter and salt. I like to sauté green beans with butter and garlic or boil them with onions and a little bacon grease.

Roasted cauliflower is one of my favourites. Chop up a cauliflower, put it on a baking sheet with some oil, salt and pepper, and roast it at 400 degrees for maybe 30 minutes? 45? Turn the pieces every so often - they get crispy and delicious.

DH and I were just discussing that we need to incorporate more veggies into our meals. All of our meals are very meat-centered and veggies are an after-thought (if we have them at all). I just don't have any veggies that I love or have great recipes for... what are your favorite veggies & recipes?

Thankfully, we drink a green smoothie every morning, otherwise we'd get no nutrition, haha.
