@jlm22: oh yeah I love them in salads- with a little cheese, cranberries, and nuts? Yum. I also slice one really thin and put it in my turkey and cheese melt sandwiches.

I make apple leathers (like fruit roll-ups). Just chop up the apples (remove the core), boil down with some cinnamon and lemon juice, and let them dehydrate in our dehydrator. You can also use an oven. Super tasty. :)

We've had a ton of apples too and they're almost gone! For breakfast: if you like oatmeal, cut the apples up and add in with some cinnamon, yum.

Also - make pancakes, cut up the apple in bits, add into cakes poured on griddle, sprinkle cinnamon/sugar on top. Sooooooooo good.

Cinnamon Apple Pie Bread - SO good!

Also, this isn't really a recipe, but I like to cut up apples and put them in a salad with honey mustard. It was my favorite salad when I was pregnant!

@regberadaisy: just put the apple cake in the oven. I couldn't find my springform pan so put it in a regular cake pan, hopefully it still comes out- but if I have to eat it with a spoon I will. C "helped" (whisked and spilled some flour) so hopefully it's ok!

@Mrs. Goose: mm love the apple ring pancakes idea! Do the apples get cooked through in the time it takes for the batter to cook?
Eta: der never mind. I see you bake them too.
@skipper2010: apples and peanut butter is one of our favorite snacks! Yum.

@Mrs. Goose: I just eat it on toast/biscuits. I think you can also bake with it, but I haven't done that. Most often, I just end up eating it plain with a spoon! It's like the insides of an apple pie.....omg, so good!

@yoursilverlining: What do you use apple butter for? I have heard about it, but never had it.

I have made apple pancakes before. You can ether dice the apple and mix it in with batter or peel the apple, core it, slice it in rings and dip it in pancake batter, cook them on stove, sprinkle with cinnamon, then bake in the oven for 10 ish minutes. You can limit the sugar as much as you like and use whole wheat or gluten free flour.

Make apple butter! If you have a crockpot, it is SO EASY and tastes so good. Just peel, core and chunk up apples, toss with just a bit of nutmeg, cinnamon and all spice and then let cook on low overnight. Mash up a bit with a fork the next morning and depending on how thick you want it, just run it through a fine mesh colander to remove liquid

I just made this on Friday for DH's birthday. It was super simple and yummy. My 3.5 year old was able to help pretty much the whole time.

I halved the sugar, and only used 3 large apples.

http://mobile.canadianliving.com/food/marie_helenes_apple_cake.php

Also, saw an idea on Pinterest for making mini caramel apples using a melon scooper!

Went apple picking last week and still have lots of apples left. We've been eating them raw and I made a big (so delicious) apple crisp, looking for more semi healthy recipes to use them up before they go bad.

Share your favorite recipes with apples, sweet or savory.
