This is a hit in my house. I chop up a bunch of greens (baby kale, spinach, etc) and throw them on top the eggs before I pour on the eggs.

Mine isn't really healthy either.

Tear up pieces of bread (any kind) into a casserole dish. The amount of bread you need is based on the type of bread and size of the dish, but for a 9x13 it is usually like 8(ish) slices. They should be sort of loosely piled in there filling about half the height of the pan. Cook 1 tube ground spicy breakfast sausage (or whatever kind you like), drain, and put it on top of the bread. Sprinkle the top with cheese (I use cheddar. Probably like 1.5ish cups??). Beat eggs in a bowl (number of pieces of bread + 2 eggs) with 1/2 cup of milk and a bit of salt and pepper. pour over the top of the casserole. Put foil on top and refrigerate overnight. In the morning cook at 350 until the egg is set and cheese on top is browned. (around 40ish min, but again depends on your dish)

I just made this one for the first time this week. Even DH, who doesn't like sweet potatoes, likes this! It's Whole30 approved, as well.

@jhd: Great, thanks! I always get ambitious at night and think, "I'm tired of instant oatmeal -- I'm gonna get up early tomorrow and make a nice egg breakfast!" and then in the morning I'm like, "Ehh, oatmeal it is..." lol

For me at work in the morning, I do an egg bake similar to Blackbird. They're never the same twice, sometimes, I use leftovers, other times I don't. I also make 6 portions and pack it in a small container.

For company, I like stratas. They feel so luxurious.

@MrsSCB: I do the same with the Betty Crocker link above. I just let it cool and then slice and put individual slices in the freezer so we can pull them out and reheat. I'm not a morning person either!

Not super healthy but not horrible either: http://smittenkitchen.com/blog/2009/12/spinach-and-cheese-strata/. It's AWESOME. I bet you could sub in skim milk to cut the calories if you wanted to.

@blackbird: That sounds really good! Is it something I could refrigerate and then reheat pieces throughout the week? I'm looking for more variety than oatmeal and cereal for breakfast, but I am not a morning person so I like easy stuff :-)

Mine's really simple! Dice up lots of veggies: onions, peppers, spinach, sun dried tomatoes, green onion, broccoli, whatever you have. Dice up some turkey kielbasa or sausage. Dump it all in a glass pan. Pour some eggs and liquid egg whites on top. You can add cheese if you want, I usually don't. Bake until set.

Do you have a favorite (healthy-ish) breakfast casserole recipe?

I have made Mrs. Tricycle's ham & cheese rosti several times already. So good!

I also make this a lot. I double the recipe and then freeze slices for us to reheat for breakfast.
