&#60;p&#62;Crock Pot Breakfast Casserole&#60;/p&#62;
&#60;p&#62;Print this recipe!&#60;/p&#62;
&#60;p&#62;Serves 12&#60;/p&#62;
&#60;p&#62;Barely adapted from Jimmy Dean&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;br /&#62;
30oz bag frozen hash browns&#60;br /&#62;
1lb sausage, browned &#38;amp; drained&#60;br /&#62;
8oz shredded cheddar cheese&#60;br /&#62;
8oz shredded mozzarella cheese&#60;br /&#62;
6 green onions, sliced and divided in half&#60;br /&#62;
12 eggs&#60;br /&#62;
1/2 cup milk&#60;br /&#62;
1/2 teaspoon salt&#60;br /&#62;
1/4 teaspoon pepper&#60;/p&#62;
&#60;p&#62;Directions:&#60;/p&#62;
&#60;p&#62;Spray a large crock pot with non-stick spray then place half the hash browns into the bottom. Layer in half the cooked sausage, half the cheeses, and half the green onions, then repeat hash brown, sausage, and cheese layers.&#60;br /&#62;
In a large bowl, whisk together eggs, milk, salt, and pepper, then drizzle over top. Cook on high for 4 hours, or low for 8 hours, or until eggs are set. Serve with remaining green onions, salsa, or guacamole.

&#60;p&#62;when I'm out to a restaurant or dh is cooking, I love poached eggs for brunch! but that's hard when cooking for multiple people. Also, I'm pregnant now so now poached eggs for me :(&#60;/p&#62;
&#60;p&#62;I've made this &#34;24-hour omlette&#34; for a brunch party before and it was a big crowd-pleaser! A little heftier than a quiche&#60;/p&#62;
&#60;p&#62;24-hour Omelet&#60;/p&#62;
&#60;p&#62;1 loaf challah or other rough textured  bread, such as 1/2 challah, 1/2 whole wheat&#60;br /&#62;
8 eggs&#60;br /&#62;
1 lb. shredded cheese (you choose flavor - swiss, cheddar, jack, etc.)&#60;br /&#62;
4/3 lb. sliced mushrooms&#60;br /&#62;
1 large onion chopped&#60;br /&#62;
1 green or red pepper chopped&#60;br /&#62;
2 cups milk&#60;br /&#62;
1 stick melted butter or margarine (made of veg. oil)&#60;br /&#62;
3/4 teasp. dry mustard&#60;br /&#62;
1/2 teasp. salt&#60;br /&#62;
1 Tablesp. chives or chopped green scallion and go liberal&#60;br /&#62;
dash of pepper&#60;/p&#62;
&#60;p&#62;Tear bread into chunks and spread evenly in 13 x 9 rectangle cooking pan coated with non-stick spray.&#60;br /&#62;
Pour melted butter/marg. over the pan. Sprinkle with the grated cheese. Sautee veggies with olive oil and spread over cheese.&#60;br /&#62;
Beat together eggs, milk, and rest of seasonings &#38;amp; pour egg mixture on top of pan. Cover with foil and refrigerate overnight.&#60;br /&#62;
Bake covered with foil at 325 Degrees for 50 minutes. Uncover and cook til slightly browned, another 10 minutes.
