BBQ pork for pulled pork sandwiches--put pork shoulder in crockpot with a little bit of water (just to cover the bottom of pot), pour some BBQ sauce over, cook on high 5-ish hours or low 8-10 hours...I put some more BBQ sauce on about an hour from the end if I'm home. Serve it on rolls. Sooo tasty!
Definitely meat-heavy but not complicated :)

I do chicken broth in the crockpot: whole chicken, veggies, garlic, peppercorn, let it go all night. Total game changer from when I used to do it over the stove.

My three favorite crockpot recipes are these:

Chicken enchilada soup - http://www.thekitchn.com/recipe-slow-cooker-chicken-enchilada-soup-193675

Hirino psito pulled pork - http://www.ayearofslowcooking.com/2009/03/crockpot-hirino-psito-slow-roasted-pork.html

Chicken burritos (I put this filling into tortillas with cheese and freeze them for easy and quick meals) - http://www.thekitchn.com/recipe-slow-cooker-chicken-burrito-bowls-207333?utm_source=RSS&utm_medium=feed&utm_campaign=Category/Channel:+Main

Italian-style turkey chili. It's heavy on the veggies and you can add whatever you want. Browned ground turkey, chopped sautéed onions and red peppers with garlic, carrots, zucchini, cannelini beans and a jar of tomato sauce. Add chili powder and Italian seasoning to taste. Cook on low 6 hr.

When I roast a whole chicken I freeze the broth, bones, and any meat left that I don't put away for sandwiches and it makes a great base for a chicken soup.

In a large pot I simmer the frozen broth long enough for the meat to separate from the bones and then I fish the bones out. I add in a big bag of frozen veggies and sauté some fresh veggies to add as well. Usually it's carrots, celery, onions, and garlic. Depending on how much broth I have I might need to add a container of store bought. Sometimes I'll add pasta or rice to it.

There are so many recipes out there but i want to hear some tried and true crock pot/soup recipes to add to my menu this Fall. :)

Bonus points if it isn't crazy complicated or super meat heavy.
