These sound amazing! I'll have to dig out some of my favorite recipes, but I definitely third the chicken and salsa. We also usually add black beans, and right before we eat, we'll add in corn for about 20 minutes. It makes a great chili!

Our favorites are either chicken with any sort of marinade/BBQ sauce - throw in, shred chicken, voila!

Every time I make Honey Sesame Chicken people love it. I use the recipe below, but add in 1 tbsp of sesame oil, and emit the vegetable oil. Also at the end I use 1/4 cup of cornstarch (instead of 4 tsps) to thicken it.
http://www.sixsistersstuff.com/2012/01/slow-cooker-honey-sesame-chicken-recipe.html

I also make these Korean shredded beef tacos:
http://crockpot365.blogspot.ca/2011/11/slow-cooker-shredded-korean-beef-tacos.html
My changes for this recipe are that I use a huge chunk of ginger (easily 2-3 inches) and toss that, the garlic, onion, and jalapeño (with seeds and ribs intact) and whirl it in the food processor to mince it all and toss that all in slow cooker. I use a pork tenderloin instead of beef last time, and that was awesome to.

@pelikila: Mmm I've been looking for a good chicken tortilla soup recipe in the slow cooker.
I see a ton of pork recipes in the slow cooker but pork makes me sick. It sucks, because so many of the recipes look so good!

@boiledpnut: I never heard of mac and cheese in a slow cooker. Does the cheese on top get a skin, like when you microwave it? Or is it more like stove top mac n cheese?

Hamburger Soup:

1 lb Hamburger, well browned
1 cup chopped celery
1 cup chopped carrots
1/3 cup barley
1 tsp basil
1/4 tsp thyme

Throw it all in the slow cooker, cook on high for an hour then switch to low for a few hours (like 4 or so). I usually just check a carrot to see if they're done.

@foodnerd81, @meggo5, @boiledpnut, @pelikila: Thank you SO much for your recipes!! I'm so excited to make them.

Another one I did make once was slow cooker mexican pulled pork (would be great for tacos but we ate it on a bun).

Put a pork tenderloin in your slow cooker (1 lb). In a bowl mix 1 15 oz can of tomato sauce, 1 TB chili powder, 1 TB ground cumin, 1 TB brown sugar, 1 tsp cayenne pepper, 1/2 tsp salt and 3 cloves garlic minced. Pour onto the tenderloin. Cook on low 8 hours. When done, the pork will easily shred.

It's a bit spicy but very good!

Pulled Pork for sandwiches: http://www.skinnytaste.com/2011/06/crock-pot-kalua-pork.html

ETA: for the soup, the chicken can get dry so consider taking it out part way through and adding it back in at the end. Also, garnish however you like. I add a spoonful of sour cream, some cheese, and slices of avocado.

@Foodnerd81: We do the chicken and salsa as well and love it! Makes good soft tacos.

I'm kind of lazy with the crockpot and use a lot of the McCormick packets. I love their pot roast seasoning packet. I also make mac and cheese in the crockpot.

16 oz noodles (cook and drain)
1 stick of butter or margarine
1 large can of evaporated milk
1 1/2 cups of fresh milk
2 1/2 cups of shredded cheese (I use sharp most of the time - it just depends on what you like)
2 eggs beaten
Salt and Pepper to taste

Cook noodles, drain, put in crock pot (don't forget to spray pot first), add butter and stir until melted. Add 2 cups cheese and stir well.
Add milk and stir, add can milk and eggs, salt and pepper and stir.
Add rest of cheese on top of macaroni. Cook 3 hours on low.

Barbecue Chicken Sandwiches:

1lb chicken breasts or thighs, boneless, skinless
1 onion, chopped
1 bottle store-bought BBQ sauce
6 buns or rolls

Chop onions and layer on bottom of slowe cooker. Place chicken pieces on top and cover in BBQ sauce (I sometimes use less than a full bottle, depends on the amount of chicken used).

Cook on low for 6 hours. Serve on buns or rolls. I like to use whole wheat ciabatta rolls!

I love this easy pulled barbecue chicken recipe: http://www.food.com/recipe/slow-cooker-barbecue-chicken-136013
Just be careful that the pot is pretty full and don't let it cook TOO long because all the sugar in the sauce will burn.

Beef and butternut squash stew: http://www.self.com/fooddiet/recipes/2009/11/beef-stew-with-butternut-squash
This one always comes out SO good. It's not written as a crock pot recipe, but I brown the meat first, then toss everything, including the meat, into the crock pot and cook on low for 8+ hours.

Turkey White Bean Pumpkin Chili: http://www.skinnytaste.com/2011/10/crockpot-turkey-white-bean-pumpkin.html
SO good. Doesn't taste super pumpkin-y, but if you don't like pumpkin it would probably only be OK. I love pumpkin and I love this.

Also super simple, a bunch of chicken breasts, thighs, or combo, and a jar of salsa, and 8 hours later you have perfectly cooked, easily shredded flavorful chicken. You can get the cheapest salsa there is, it comes out pretty much the same as if you use fancy.
AND, I like to cook a whole chicken in the slow cooker. As long as it all fits in, you literally just put it in and cook it on low all day. It comes apart as you take it out, so it won't be pretty like a roast chicken, but it's super tender, then you can throw everything back in with 6-8 cups of water, cook it on low overnight, and have fresh stock in the morning.

Those are my faves! I'll be following this for more!

Today I'm making hot apple cider in one crock pot and trying a new chicken and dumplings recipe in the other. I'd love it if you could share your favorite crock pot recipes. I'm really new to using them for meals. Thanks!

For my apple cider it's easy and quick:
1. Pour one jug apple cider in the crock pot.
2. Add 3 cinnamon sticks and 1/3 cup brown sugar. Stir.
3. Put 1 tsp whole allspice and 1 tsp whole cloves in cheesecloth. Tie it up and throw it on the crockpot. If you don't have cheesecloth you can put them straight in, but just be careful to ladle them out when you're getting your drink.
4. Cook on high until it starts to boil and then keep it on warm throughout the day.
Enjoy!
