Steamed corn on the cob, salad or buttered broccoli, and BBQ chicken drumsticks. The corn should be cheap right now, salad or broccoli is always inexpensive, and there are always chicken drumsticks or wings on sale. Just season the chicken and throw in the crockpot for 3-4 hours until cooked and tender. Then place the chicken on a foil lined cookie sheet, brush on BBQ sauce and stick under the broiler for 4-5 minutes or until the sauce is bubbly. Flip and repeat. For dessert just send over some ripe seasonal fruit on sale.

This meal is also cheap and easy:

http://www.thewednesdaychef.com/the_wednesday_chef/2012/02/nigel-slaters-chicken-curry.html

I've swapped out the heavy cream with coconut milk with great success and you can use whatever cut of chicken is on sale, although boneless skinless thighs are my favorite. If you don't have curry powder, look for a Whole Foods or a natural food store that sells bulk spices and you can just buy a little bit. Same with the rice if you don't have any hanging around the house.

I always bring (and is a huge hit) chicken pot pie.
2 10-12oz cans of chicken (drained)
1 cream of chicken soup
1 cream of potato soup
1 small bag of mix veggies
Salt and pepper to taste
2 pie crusts (one for top and bottom of pie) I just buy the ones by the refrigerated rolls

Line pie dish with one crust
Mix other ingredients in bowl
Fill pie
Lay other crust on top and pinch sides
Cut 4 small slits on top
Back at 365 for 45 min

Thanks for all the great ideas! I should have mentioned the Meal Train is for dinner so that the whole family can eat it. But maybe I can bring breakfast foods as brinner? Or I may bake up a batch of muffins and bring that with dinner so the mom has something to look forward to for breakfast too. Thanks again!

I am paleo and just tonight, I had a super kind neighbor bring me turkey burger patties and steamed spinach and it was delicious!

But for "normal" people, I would say spaghetti would be a cheap, universal pleaser that could be stored for other meals in the coming days.

@Mrs. Champagne: ditto! People always suggest dinner but no breakfast or lunch!

I like making mini quiche in muffin cups with spinach. And I know you said no "pasta" but a cold pasta salad with a side of grilled chicken breast is a quick throw together lunch or dinner and super cheap. I usually use tri color spiral pasta, cucumbers, cherry tomatoes, tri color peppers(omit to save $) then a good dosing of Italian dressing.

I made these tonight and they were SO easy, I never would have thought to bake quesadillas (usually I make them on the stove top) but I loved that they all finished at the same time :) These will reheat nicely and are very filling and yummy!

http://damndelicious.net/2015/02/07/cheesy-avocado-quesadillas/

ETA: Oh & I served it with greek yogurt, not sour cream ;)

One of my friends who refuses to cook stopped by the grocery store and picked up a whole roast chicken, mac n' cheese, green beans, rolls and mashed potatoes. She threw in some bakery cookies and muffins and fruit and I scarfed that entire meal down and it was amazing.

I checked and our local Publix offers the meal deal - chicken and 2 sides - for $10!

Recently, I have done easy and quick breakfasts since they already have a full schedule of lunch and supper coming. Just a box of good blueberry muffin mix and then I make mini frittatas. They store easily without taking up much space and can be frozen. Only take a few seconds to heat up. I have only put bacon, cheese, onions, and bell pepper in mine but the possibilities are endless. Easy and cheap for me because I already have all of these things on hand. Just be sure to spray your muffin tin very well. This is the basis of my recipe:

My friend recently had a baby and I'd like to bring over a meal. We are a little tight on our grocery budget right now so I'm looking for something yummy, not too hard to put together (cooking is not my forte), and relatively affordable to put together. If you could share the actual recipe, that would be doubly great! She's noted on "Meal Train" that she prefers no onions, mushrooms, or sour cream if possible. Thanks in advance!

ETA: I think a lot of people are bringing some type of pasta so would to stay away from that so she has some variety. :)
