<description>&#60;p&#62;I just did a ton of freezer foods as I'm going back to work this weekend. I have in my freezer now:&#60;/p&#62;
&#60;p&#62;a ton ( like 36 ) mini chicken pot pies.  I used a jumbo sized muffin tin to make them individually in.  I bought pilsbury rolls, rolled each roll out and put it in the muffin tin. I filled with this recipe&#60;br /&#62;

&#60;p&#62;(not sure if that link will work, it said the server is down right now. ) But I just bought a rotisserie chicken and used that instead of cooking up chicken breasts. If you like extra pastry, you could roll out one of the rolls and put it on top to cover, or fold the edges of the one in the tin over the top of the filling. These turned out really really yummy and are super handy. I've seen my husband sneak them a few times already, and they've worked really well. He just popped them in the microwave and they were really tasty.&#60;/p&#62;
&#60;p&#62;I made 2 double batches of this soup as we both love it.&#60;br /&#62;

&#60;p&#62;I did this Tex Mex Casserole tonight and froze it. The casserole is really really good, but we haven't froze one before.&#60;br /&#62;

<description>&#60;p&#62;Meatballs are great. When ground meat is on sale I'll make like five pounds worth and freeze them in bags of like 20; then all I have to do is make some pasta or soup. Also turkey chili, just made a quadruple batch this weekend so we ate one and froze three. Lasagna, enchiladas I tend to double or triple and freeze--once you're doing the work it's not adding that much time to make more.

<description>&#60;p&#62;I have tried to get in the habit of freezing half of my bigger recipes when I make them...DH hates leftovers - so this is big!&#60;/p&#62;
&#60;p&#62;My best successes have been:&#60;br /&#62;
-Muffins/Breads&#60;br /&#62;
-Lara Bar Bites (some places call them energy bites)&#60;br /&#62;
-Meatloaf&#60;br /&#62;
-Meat Sauces (spaghetti and meatballs, marinara and bolognese)&#60;br /&#62;
-Soups/Stews: I avoid anything with pasta in it bc the noodles can be iffy when thawed&#60;br /&#62;
-Some recipes I have found:  Chicken N Dumplings, Steak Fajitas, Taco Meat, Chicken Teryaki&#60;/p&#62;
&#60;p&#62;I did a Wildtree workshop once and loved their recipes too!!!&#60;/p&#62;
&#60;p&#62;I also try to always have stuffed chicken breasts (from the butcher) wrapped in portions of 2...to make for easy dinners!

&#60;p&#62;I decreased the total amount of rice from 2 cups to 1 cup, used more wild rice than it called for (1/4 cup) and halved the amount of broth. Plus I added some extra spices (1/4 teaspoon each of garlic powder and onion powder and a couple teaspoons of oregano). DH and DD loved it!&#60;/p&#62;
&#60;p&#62;I just borrowed her cookbook (Not Your Mother's Make Ahead and Freeze Cookbook) from the library and am looking forward to trying some of the recipes.

&#60;p&#62;One thing we always have in the freezer is some version of meat spaghetti sauce - I'll brown a few pounds of ground beef, add in some shredded carrot and chopped onions, green pepper, and mushrooms, then add a giant jar or two of spaghetti sauce, let it simmer for a while, then freeze that in dinner-sized portions for easy weeknight dinners. I just keep dry pasta in the pantry to go with it.
