following this thread, my useless contribution is that I made turkey meatballs in the oven last night, on top of mashed potato and red sauce with parmesan... and proceeded to nearly die of heartburn all through the night

@regberadaisy: I don't have a specific recipe, just anyone, and sub out the pork for turkey. Everything else is the same. Super yummy and easy. Takes a bit of time to prepare the wontons, but so worth it!

Will they eat ground chicken? I've got a recipe for Texas chicken burgers (includes zucchini and carrots), although I bet you could use turkey instead.

http://m.cookingchanneltv.com/recipes/texas-chicken-burgers.html

We top it with the mustard/bean mixture.

We do turkey burgers and use olive oil to bind them together since the fat content is so low. We serve them on Hawaiian buns with BBQ sauce  or make them into meatball subs with pizza/tomato sauce and melted provolone/mozzarella.

I do a version of Ina Garten's turkey meatloaf (I make the onion jam part with just onions, Worchestershire, dry thyme, and ketchup, for instance). I also add some parmesan to the meat mixture, but totally optional. We love it more than beef meatloaf. You can also make it into meatballs that can be dipped in ketchup too and it makes incredible sandwiches.
http://www.foodnetwork.com/recipes/ina-garten/turkey-meatloaf-recipe.html

This is also meal that doesn't seem like much, but its DELICIOUS. We don't use the pine nuts and I just brown the turkey with the spices and onion in the beginning, throw all the other ingredients in, and cook it all together in one pan. So good, especially with a little tomato salad on the side.
http://allrecipes.com/recipe/87496/middle-eastern-rice-with-black-beans-and-chickpeas/

As a note, we use "lean" turkey which is a little darker, over than the 99% fat free ground turkey, which I think is too dry.

We love Skinnytaste turkey picadillo. http://www.skinnytaste.com/2010/02/turkey-picadillo.html

D has also been known to devour these meatballs. I usually make the Skinnytaste fried rice with them. http://www.skinnytaste.com/2010/01/asian-turkey-meatballs-with-lime-sesame.html

And this is a favorite, too. I've made it with sweet potatoes and regular potatoes. Delicious either way. http://www.skinnytaste.com/2012/11/sweet-potato-turkey-shepards-pie.html

or mix with taco seasoning, which feels obvious.

I also use Malibu Seasoning and will do that plus worchestershire and 1/4 c bread crumbs per 1lb of turkey and make a meatloaf, then slice it for breakfast. It's very garlicky
