I just made an easy crock pot meal last night that could easily adapt to the freezer.

1 lb chicken breasts (I cooked them in the crock pot, you could cook and cut up ahead of time)
Cooked with: 1-2 Tbsp olive oil, 1 packet Italian dressing mix, and about 1/2 c. chicken broth. (I also added more seasonings - i.e., 1/2 onion diced, extra garlic, etc. but you can adjust)

After the chicken is cooked (about 6 hrs on low), add:
- 1 block cream cheese (I used low fat)
- 1/2 can cream of chicken soup
- I also added 1 bag of steamed broccoli florets

Mix all together and let it cook for another 30 min-1 hr. It makes a great creamy chicken kind of sauce. We ate it over egg noodles.

Would they eat chili? You could portion a big pot into freezer bags for them.

Also, not the absolute healthiest out there, but pretty easy and I think picky eaters would like it: http://www.spiceandsass.com/2013/07/dinner-from-freezer.html

Maybe a stew or soup? I make a tomato, bean, pasta soup that I portion and freeze for M all the time.

@locavore_mama: picky eaters make it even more difficult to help! My in laws won't eat any beans, brown rice, most veggies, any spices, etc. I think my FIL lives on bran muffins, instant oatmeal, soup, and peanut butter crackers.

I used to make a black bean enchilada casserole that froze well. Beans, salsa, corn tortillas, brown rice, reduced fat cheese. However, my in laws would consider that dish to be WAY adventurous!

No cooking involved but pop in oven post defrost kind.

ILs are eating like sh!t but FIL is refusing help. I suggest to DH let's just make freezer meals and drop them off.

Anyway, they're not adventurous eaters so nothing crazy.
And preferably VERY budget friendly. Money's pretty tight right now for us so money for groceries for two more adults right now will be tough!

Thanks!
