@ineebee: I don't know how galbitang slipped my mind! Galbitang and Sullungtung are my two faves too. Yum.

@tofuwad: @PawPrints: that's my go-to blog for Korean recipes! I agree once you're familiar with the ingredients the dishes become easy to make. A lot of dishes use the same things - gochujang, red pepper powder, soybean paste, soup soy sauce, sesame oil...

@PawPrints: this one is pretty okay: http://www.koreanbapsang.com/ingredients

I think the first step is getting familiar with Korean ingredients. It's not a comprehensive list and she doesn't include anchovies and toasted sesame seeds, or daikon, or Asian pear, or some sea greens and other specific ingredients but that's a good start for a pantry.

She talks about the anchovies here (anchovy stock is somewhat comparable to a Japanese dashi): http://www.koreanbapsang.com/2011/06/how-to-make-anchovy-broth-for-korean.html

I mostly learned from blogs and/or talking to my Korean SIL. The other thing is finding good kimchi. I like to order something at a restaurant and then try to replicate it at home.

Sorry if this is rambly my DD has the flu and I've been up for like three days!

I love galbi over bulgogi too!

I love Korean food so much, it's hard to choose! Have to say sullungtung for cold days, and nangmyun for hot days!

When ordering at restaurants I almost always choose sullungtung or yukejang. I like kimchichigae too, but it is easy to make at home!

I'm not Korean but I have a Korean friend who has introduced me to all of the amazing food. We go to K-town in NYC every month or so.

Our must-haves are always the kimchi jiggae, galbi, kimchi pancake, and I don't know the Korean name but it's rice cakes in a spicy sauce with seafood.
Of course kimchi. Yum! I keep some in my fridge.
And I cannot get enough of the doenjang and raw garlic to go with the galbi...and everything! When we go I ask the server for a soup bowl of doenjang and I eat all of it. So salty. So good. Yummmm. Hungry now!

@junebugsmama: Order Japchae or Bibimbap as a "beginner"! My Korean Ex ordered bibimbap for me when we first started dating and I loved it. If you don't like spicy at all, japchae is the safest. The ex ordered Japchae for my mom (when she was visiting us from Hong Kong, and she has never had Korean food) and she exclaimed wow, how do you cook that? It is so tasty!

ahhhh I want Korean food! RIGHT NOW!

I basically checked everything except bulgogi. It is tasty, but I am not a big fan of that for some reason. There was never a "oh I am craving bulgogi" moment. Funny I knew about korean food because I used to date a Korean guy, and that's when I really tried Korean food. I started out really liking bibimbap. Then the stews/soups slowly grew on me. Now I usually only order stews/soups at a korean restaurant, unless if we were set to do Korean BBQ then we'd be ordering the BBQ thingies.

Marinated black beans

When I was a kid I always asked for galbi for my birthday dinner! And now my Korean SIL always makes me some for my birthday (she also makes these killer chicken wings that are marinated in a galbi marinade). I love that Korean food is becoming more popular!

I voted "All the Korean food!" because I do love most of it - we even make bibimbap at home sometimes. Yookgyejang is my absolute favorite thing.

@Mrs. Bee: Thank you for spelling out yookgyejang! This is my all time favorite, but discovered it in in Japan, so I only know how to recognize it on a menu in katakana, and was afraid I was absolutely butchering the pronunciation when I tried to order it in Korean restaurants in the US (where obviously the servers didn't speak Japanese)....nevermind googling it to try out a recipe at home! Now I can do both :)
