<description>&#60;p&#62;@mrsbubbletea:  it really depends on the recipe. Some, like the one I posted above, use French green lentils, which hold their shape really well when cooked. A dal recipe, or a soup recipe that's meant to be puréed, often uses red lentils because they do just the opposite - they really fall apart when cooked. Regular old green lentils are somewhere in the middle and I use them in chunky soups and in vegetarian shepherds pie (my favorite is this one: &#60;a href=&#34;http://www.thekitchn.com/recipe-lentil-and-mushroom-sweet-potato-shepherds-pie-182683)&#34; rel=&#34;nofollow&#34;&#62;http://www.thekitchn.com/recipe-lentil-and-mushroom-sweet-potato-shepherds-pie-182683)&#60;/a&#62;. Sometimes you can get away with substituting one type for another, but on the whole I find I'm not very satisfied with the way recipes come out if I do that. So I'd find a recipe you want to try, then buy the type of lentils it calls for. If it doesn't say, it probably just means standard green lentils. Hope that helps!

<description>&#60;p&#62;I toss a bag of lentils with about 6 cups of stock,  some red pepper flakes, a diced onion, a bay leaf, some diced carrot or sweet potato and some garlic in my crockpot. If you use green lentils it stays hearty and bean like. If you use split red lentils they cook down into a creamy texture like grits. Both are good. Sometimes we add a little spicy sausage or dice spinach. Serve over rice to create a complete protein.
