Add some chopped chicken if you want a complete meal. Hearty sandwiches like turkey and cheese and pesto on ciabatta, turkey and hummus and spinach on pita, or roast beef and horseradish on a crusty roll - they don't go mushy. A good fruit salad. Something sweet like chocolate pudding or brownies.
