<description>&#60;p&#62;I also use the Natasha's Kitchen recipe @Meso posted. I've used both cornflakes and Panko on them and don't really have a preference. I usually make a double batch and freeze most of the nuggets uncooked (freeze flat on a baking sheet, then transfer to a ziplock bag). They only take a couple extra minutes to cook from frozen. The breading gets a bit soggy but we don't mind.

<description>&#60;p&#62;I like to use panko because it's lighter than some other breading options. I would cook first and then freeze - I just cut chicken breast into &#34;nugget&#34; like shape/size, bake, let cool and then lay on a cookie sheet on parchment paper in the freeze in a single layer so they don't stick together. Then just throw in a ziplock bag once frozen, good to go.

<description>&#60;p&#62;I'll have to ask DH when he wakes up but I'm pretty sure he just blends chicken in the Vitamix blender, then egg wash and bread crumbs-or maybe it is panko. They are yummy. We like them thin.  We haven't stuck them in the freezer but one time LO took it for lunch the second day. They were just ok looking and wouldn't recommend it.

Bonus question: have you frozen them? How did that turn out?&#60;/p&#62;
&#60;p&#62;Basically I've been keeping Freebird Popcorn chicken on hand in case I run out of time or energy for dinner. They're honestly really good, it's breaded chunks of chicken breast. BUT I thought if I could make my own in a big batch and freeze them I'll feel slightly less guilty (I'd feel happy that I made them and probably a lot cheaper). I'm not really into cooking but I don't mind things I can do in batches and freeze for later. I'm all about convenience when feeding LO!
