following!

I have a picky eater, and some of my husbands favourite meals she does not enjoy: tacos and perogies. She only likes the tortillas and cheese from the tacos, lol. I might start making her quesadillas when we have tacos...
I always have yogurt tubes in our freezer (buy on sale even near expiration date and they keep forever), I try to keep muffins, rolls of a variety of types (bannock, biscuit, bread).

She loves to pick at fruit, and grapes keep well in the freezer, I also buy large bags of mixed fruit.
My moms leftovers casserole also keeps really well, and she loves it.

I don't have a toddler, but I make this for DH often. I make a double batch & then when it's cool I cut it into squares and wrap individual portions & freeze. Sometimes I remember to thaw it overnight in fridge other times he just defrosts in microwave. I use bacon bits so I don't have to cook & cut up bacon. And we have also tried it with different veggie combos instead of bacon.

I make a big bag of these turkey meatballs to keep in the freezer (http://www.marthastewart.com/875683/turkey-meatballs). They are delicious!

I also freeze marinara and pesto sauces in ice cube trays and then keep them in a bag, so I can mix up a small bowl of pasta for LO in a flash. I hide extra veggies in the sauces as well.

Other things I freeze: mini quiches from 100 Days of Real Food, muffins, soups, chili, pizza rolls (I make a regular homemade pizza in a square shape, roll up, slice and bake), homemade egg mc muffins and breakfast burritos. Most of my recipes are from Americas Test Kitchen, though I found the breakfast items via Google.

These pancakes freeze really easily, and my LO LOVES them plain, so they're great for the car, too. The kiwi/banana in the title is just a topping, but I use the basic pancake recipe at least twice a month.

And here are the zucchini tots from skinnytaste I'd like to try! Veggies for LO and he'd probably love dipping them in ketchup!

Here are the greek yogurt and carrot muffins LO likes. I add raisins. I had some in the freezer for at least a month and they were still great. I thaw in the fridge or on the counter from morning to lunch time or just nuke for a few seconds in the microwave.

Following! We have also had success (for us, LO doesn't love meat) with making turkey meatloaf, freezing, and then thawing at a later time. Soups/chilis also freeze well.

Dual purpose here - need to save money on food in November AND prep for a crazy hectic week of work while solo parenting (while DH is out of state for work).

I have a fairly healthy carrot muffin recipe I know LO likes and freezes well (I let them thaw in his lunchbox). What else? I'm eyeing some zucchini tots on Pinterest and love the idea of Mac n cheese in muffin tin portions too.

Bonus points for recipes and thawing/reheating instructions!
