@Mrs. Lion: I love websites and cookbooks rather than blogs, which can be hit or miss in their recipes.

I've had great luck with the recipe databases at Vegetarian Times and Whole Foods.

Also, the New York Times Cooking website
The Kitchn
Serious Eats

For cookbooks, I like Bryant Terry for soul food, Mark Bittman for basics, Madhur Jaffrey for Indian food, Terry Hope Romero for seriously fun vegan recipes with an international flair, and Ottolenghi for drooooool recipes/pictures.

All sites and books fun to browse through!

This curry:
http://www.thekitchn.com/heres-a-simple-curry-that-130340

These two soups with good bread and salad:
http://cooking.nytimes.com/recipes/1016062-red-lentil-soup-with-lemon

http://smittenkitchen.com/blog/2010/01/black-bean-soup-toasted-cumin-seed-crema/

This chili, but add either a spoonful of cornmeal or half a can of mashed beans to thicken:

http://www.tasteofhome.com/recipes/sweet-potato---black-bean-chili

Also, a good salad recipe just because we all need one:

Romaine lettuce, shaved Parrano cheese, thin sliced firm apple like pink lady or Braeburn, toasted walnuts, croutons, and a homemade dressing of olive oil, Dijon, apple cider vinegar, salt and pepper, and a pinch of sugar. It's magical and crunchy and fresh and substantial.

This is my fave! I pair it with quinoa and it's GF and vegan. Because it's all veg it's not always popular with toddlers. I love to slow-roast the tomatoes for a couple hours and make a triple batch and eat it all week.

I also make a lentil chili that's pretty great.
http://m.wholefoodsmarket.com/recipe/lentil-chili

This chili freezes really well too. I like to make a double batch and freeze half.

I made these vegetarian fajitas: http://www.twopeasandtheirpod.com/roasted-chickpea-fajitas/
My meat-loving husband didn't even complain about the meal seeming incomplete. I think it's because the chickpeas add some protein.

I also make curry with sweet potatoes and chickpeas that's pretty filling.

We like falafel with veggies and pita. Bean tacos/quesadillas/enchiladas. Eggs baked in spicy marinara sauce and served over sautéed spinach with a baguette.

Regularly in our rotation are:
black bean tacos
falafel (best left for a weekend though) http://www.epicurious.com/recipes/food/views/my-favorite-falafel-231755
chili w/beans
curry (I make with store-bought curry paste w/lots of veg and potatoes to give a little more heft. I also like this recipe: http://www.food.com/recipe/lentil-sweet-potato-coconut-curry-481246http://www.food.com/recipe/lentil-sweet-potato-coconut-curry-481246 which is a bit different. The pics on this recipe are terrible but I think it's delicious!)
pizza
enchiladas
quinoa/burrito bowl

Basically beans I think are the secret to not being hungry after.

I love this lentil soup: http://pinchofyum.com/the-best-detox-crockpot-lentil-soup

I also made this recently and it was pretty good: http://www.101cookbooks.com/archives/coconut-red-lentil-soup-recipe.html i thought it lacked a bit of heat, and found that adding some sriracha made it pretty delicious.

I find that Pinch of Yum and 101 Cookbooks have some great vegetarian recipes.

I love coconut milk to make vegan things filling and super tastytreat-like.
This is awesome over rice or a sweet potato: http://www.thekitchn.com/recipe-braised-coconut-spinach-chickpeas-with-lemon-recipes-from-the-kitchn-164551

These lentils with a veggie sausage (the vegan chorizo from Trader Joe's is perfect): http://www.mycolombianrecipes.com/colombian-style-lentil-soup-sopa-de

If you want vegan, check out the Oh She Glows blog. Smitten Kitchen's vegetarian recipes are usually awesome (and she has a lot).
I made these this week and they were tasty and filling, plus I think they would freeze well: http://www.annies-eats.com/2015/04/08/pinto-bean-and-swiss-chard-baked-burritos-an-atk-cookbook-giveaway/
