<description>&#60;p&#62;We've been trying to incorporate more vegetarian meals into our diet. I'm aiming to make vegetarian meals at least 50% of the time, preferable closer to 75% (or so). I'm working on a meal plan for March right now, and this is what I have so far: &#60;/p&#62;
&#60;p&#62;-Spinach and cheese enchiladas&#60;br /&#62;
-Linguine with zucchini and chickpeas&#60;br /&#62;
-Quinoa patties with sweet potato fries&#60;br /&#62;
-Honey and soy glazed salmon*&#60;br /&#62;
-Black bean and cheese taquitos&#60;br /&#62;
-Lentils and rice with caramelized onions&#60;br /&#62;
-Cheddar and apple quesadillas&#60;br /&#62;
-Curried eggplant with tomatoes and basil&#60;br /&#62;
-Slow-scrambled eggs with mushroom ragu*&#60;br /&#62;
-Butternut squash and spinach lasagna&#60;br /&#62;
-Baked pasta with spinach, lemon and parm cheese&#60;br /&#62;
-Orzo ratatouille (based off of smitten kitchen's baked orzo with eggplant and mozz)&#60;br /&#62;
-Noodles and green beans in a spicy peanut sauce&#60;br /&#62;
-Chickpea and spinach curry&#60;br /&#62;
-Black bean chili&#60;br /&#62;
-Rice and corn cakes with spicy black bean salsa&#60;br /&#62;
-Eggs poached in spicy tomato sauce over fried polenta*&#60;/p&#62;
&#60;p&#62;*I know some people who don't consider eggs or fish to vegetarian, but we do.

<description>&#60;p&#62;I've been making this Sweet Potato, Black Bean and Quinoa Chili a lot this winter. The only real changes I make are to use hot sauce (I use Frank's) instead of the Chipotle Tabasco and sour cream instead of greek yogurt (what I had). And I usually throw in an can of diced tomatoes because DH likes it, and make up a pan of cornbread muffins to go with it. &#60;/p&#62;

It's just lasagna shells, ricotta cheese, spinach, minced garlic, parmesan, tomato sauce and mozz cheese. These are certainly not as good for you as say... a plate of broccoli, but I guarantee they taste better!
