<description>&#60;p&#62;@Meridian: I am no expert so couldn't tell you!  My guess is that bringing the kimchi to a boil will kill the bacteria, good and bad.  But jiggae has so many healthy ingredients (veggies, tofu, etc.) that I think it's healthy for other reasons!

<description>&#60;p&#62;I love kimchi fried rice, or cooking it in a pan before adding eggs to make kimchi scrambled eggs. Or Kimchi stew. But cooking it probably kills the probiotics. I also love kimchi grilled cheese. You can also add kimchi to beef stews. I actually usually have a gallon jug of kimchi in my fridge!  :silly: &#60;/p&#62;
&#60;p&#62;If you look at the pickles in the grocery store, ones made with salt (versus vinegar) should be probiotic. Also sauerkraut should be probiotic as well. My MIL does not like kimchi at all but she loves sauerkraut and pickles.

&#60;p&#62;But you can easily incorporate homemade fermented foods - look up recipes for homemade lacto-fermented pickles, cortida or sauerkraut - which isn't as spicy and sharp and can more like traditional pickles.  You can even lacto-ferment ketchup and salsa!
