We make stir fry at least once a week using what veggies we have on hand: usually broccoli, carrots, peppers, mushrooms and serve over sautéed cabbage. Weake a sauce out of amino acids, toasted sesame oil, red wine vinegar, mustard, sriracha and in ours we add a little honey.

Our other favorite is Jamie Oliver's beef stew- sooooo good. Best stew ever.

And lately since its seasonal, stuffed squash.

@HLK208: I also make enchiladas, but mine are pretty healthy :)

I also make bbq turkey meatloaf and we make all different types of tacos. More creative styles. Very easy.

Meatloaf! I make it up the night before and just have it in the fridge, 30 minutes in the oven and it's ready to go. LO loves eating ground meats at this stage and there is always enough for leftovers.

Enchiladas are quick and easy, DS is crazy about them but they're not that healthy. At least 1-2 times a week, I'll sauté veggies in coconut oil and garlic with chicken or fish and serve with a baked sweet potato or quinoa.

What's your go-to meal that's fairly quick and is edible by both you and your LO? We do salmon that's already marinated from Costco (frozen), broccoli with butter/Parmesan and rice. Need some ideas, thanks!
