<description>&#60;p&#62;We made turkey and spicy sausage jambalaya with our leftovers.  Just chopped up two cups of turkey and a few links of spicy sausage and sautéed with a cup each of onion, celery, and green bell pepper until soft, add 2 cups of long grain rice and enough oil to toast the rice grains until they are opaque.  Then add a 15oz can of tomatoes (I like petite diced or crushed but even spaghetti sauce works in a pinch) and 1.5 cups of broth or water.  A bay leaf, a pinch of thyme, a few shakes of Cajun seasoning or just a mix of paprika, cayenne, black pepper, garlic powder, and salt.  Then let it steam covered on low for 22 minutes, then stir gently and check for water.  Might need another 1/4-1/2 cup.  If so, add it and cover for another 5-6 minutes.  Add Tabasco or hot sauce to taste.  Can omit cayenne and hot sauce and use a milder sausage or go straight turkey to make it kid friendly.  Makes a lot of food!&#60;/p&#62;
&#60;p&#62;We also made turkey tortilla soup - sauté a cup each carrots and onions and some garlic, a teaspoon each of cumin and chili powder, add a box of broth and 1.5 cups of red enchilada sauce (we like Las Palmas).  When the carrots are soft, add 2 cups chopped chicken, a cup of frozen corn, some chopped corn tortillas if you like a thicker soup, but we like it brothy and just add crushed chips on top.  Salt and pepper to taste.  Garnish with avocado, crushed chips, cilantro, sliced radishes, and cheese.  Add a squeeze of lime.  &#60;/p&#62;
&#60;p&#62;Optional: Add a can of chickpeas or some cold rice to the soup if you want a heartier soup.

&#60;p&#62;I love turkey sandwiches with warm stuffing and jellied cranberry sauce and honestly just make a huge vat of soup (I also make stock from the turkey).

<description>&#60;p&#62;This isn't that different but I did turkey pot pie with our leftovers. I only used the top pie crust because I only had one, and left out the onion because I didn't have any. Very easy and it was tasty!&#60;br /&#62;
