I love this recipe: http://naturallyella.com/2011/02/13/sweet-potato-and-quinoa-salad/ Although for some reason I always add lime, I didn't even realize it didn't call for it! The lime is awesome though!

HowSweetEats.com has a bunch of quinoa recipes too.

I use it all the time. I make a pot of it 1-2 times a week and keep it in a tupperware container in the fridge. Sometimes for lunch I like to cook a few eggs over-easy or sunny-side up and put them over a bed of quinoa. This morning I made a hash: crumbled sausage, diced roasted sweet potato (diced really small--maybe 20 minutes in the oven?), chopped mushrooms and spinach, then I threw in a cup or two of cooked quinoa and put a few over easy eggs on top. Even without the egg it's delicious (I'm having the leftover hash for lunch).

I also use it in chili--I have a recipe for a sweet potato, black bean and quinoa chili that's phenomenal.

I usually follow the recipe on the box for the ratio of water to quinoa, and then add the zest from a lemon to the pot, bring the quinoa in water with zest to a boil then reduce to simmer for about 10 min. then i make a little dressing with some olive oil and lemon juice and some dried herbs (usually herbs de provence) and pour that on it. it's so easy but nice flavor! and i make veggies on the side for it b/c DH doesn't like veggies in his grains (weirdo!)

When I was on TED I almost always cooked it as directed, like rice (1 cup quinoa to 2 cup water, you can also use broth), but tossed in every single veggies I could eat! We also added in raisins, pineapple and sunflower seeds! So good! And super quick!

If you google quinoa recipes you can find a ton and some on pinterest. You can use it for anything really from replacing rice, flour or milk to making play dough for you little one!

ETA: an all quinoa pasta is super easy! Just quinoa flour and enough water to make a dough. Roll, let dry a little and boil!

We use it instead of rice (even cook it in our rice cooker).

I've made this a few times and it's delightful
http://www.canadianliving.com/food/quinoa_and_chickpea_salad_with_tomato_vinaigrette.php

We also mix it in as a binder in meatballs instead of bread crumbs, use it as a crust for oven frittata and I'll even toast it and throw it on salads for a little crunch.

You wouldn't believe how difficult it is to get hold of quinoa at my local supermarket... there's a small "healthy food" section with grains, pulses etc. and they are usually out of quinoa. However today they had some in, so I bought a bag. Only now I can't remember what I was going to make with it...

Anyone care to share a relativly quick and easy quinoa recipe?
