A small handful of sweet potato chips plus raw veggies (cucumber, bell pepper, carrot) both dipped in hummus. Cheese and a handful of nuts.&#60;br /&#62;
Fruit and peanut butter.&#60;br /&#62;
Cottage cheese and fruit or cottage cheese and diced veggies with black pepper.&#60;br /&#62;
Also, adding black beans to salads makes me not miss croutons or bread because it fills that carb void.

<description>&#60;p&#62;I've been gluten free AND oat free for about 10 years. We do occasionally eat GF bread (Udi's), but I often cook from scratch.  I second the 'Nom Nom Paleo' site, and can add 'Beyond Kim Chi' for some ideas on gluten-free Korean food. Beware sauces and seasoning mixes that contain hidden gluten...&#60;/p&#62;
&#60;p&#62;Some of my fav recipes really haven't changed though...like roasted chicken, veggies &#38;amp; rice.  And, there are lots of simple substitutions that can make a recipe gluten free with no fussiness...like using roasted spaghetti squash instead of noodles for spaghetti, using warm corn tortillas instead of flour ones, or using rice pasta in lieu of wheat or semonlina-based pastas.

<description>&#60;p&#62;I've been gluten free for a year since my celiac diagnosis. I try not to eat a ton of replacement foods either. Here's our weekly meal plan for this week, to give you some idea:&#60;br /&#62;
Sunday: chili, cornbread (I used bobs red mill mix for the cornbread, but we usually make it from scratch. I use King Arthur's gluten free flour mixes).&#60;br /&#62;
Monday: soft polenta with roasted vegetables and fried eggs&#60;br /&#62;
Tuesday: steak fajitas with peppers and onions in corn tortillas&#60;br /&#62;
Wednesday: Caesar salad (homemade dressing) topped with grilled steak, baked sweet potato fries on the side&#60;br /&#62;
Thursday: I work, so quick meal: veggie burgers (I usually have my burgers over sautéed kale, tossed with a little red wine vinegar), sweet potatoes, salad&#60;br /&#62;
Friday: pizza (I make a sourdough crust from scratch, but we used to use bobs red mill pizza crust and really liked it)&#60;/p&#62;
&#60;p&#62;This is actually a corn-heavy week for us, now that I see it written out. We usually do a fish night (with rice or quinoa and veggies), and a soup. So you can see a lot of our dinners end naturally up gluten free. I do eat more meat now then I used to, because it's sort of what the meals center around. I usually do vegetarian chilies and soups.&#60;/p&#62;
&#60;p&#62;For breakfast I usually have yogurt with granola (we make our own, gluten free granola can be pricey), oatmeal (get gluten free oats- we buy a big affordable bag at trader joes), or eggs and a smoothie.&#60;br /&#62;
Lunches are typically leftovers, or maybe a can of soup. I do keep frozen GF bread in the house, and will toast a piece with some cheese or peanut butter.&#60;/p&#62;
&#60;p&#62;As I mentioned, I prefer having my burgers over kale to a GF bun (they get gummy and he texture is weird). I love pizza, so we tested a lot of GF options. Bobs red mill works. It isn't the same, but it's good. I've never tried a cauliflower crust, but I think that would be even healthier, and avoid some of the rice flour that's in all the GF subs.&#60;/p&#62;
&#60;p&#62;Eating t is the hardest part, for me, because I'm sensitive to cross contamination. I've found a few reliable resturaunts and we usually go there. I miss fried and breaded things a lot. My husband sometimes fries fish in cornmeal, which is tasty. Honestly, it's the unhealthy gluten foods that are hardest to replace- I guess that's probably for the better!&#60;/p&#62;
&#60;p&#62;I'm happy to answer any questions, or give you some product recommendations. I just got the cookbook &#34;it can't be gluten free&#34; (I think that's the title, it's from Americas test kitchen), and it's excellent. I highly recommend it.

&#60;p&#62;Sometimes it's easy just to break it down to list what you can eat versus what you can't.  For instance, protein, fruits and veggies.  I don't follow paleo but I do like some of their recipes b/c they're all going to be GF.  I do eat dairy and legumes.  Once you start to get used to it, GF cooking isn't that difficult and you'll learn to look at a recipe and make it GF pretty easily.  Well, not all, obviously.  &#60;/p&#62;
&#60;p&#62;And yes, GF pasta has come a long way.  I've found that it's better to cook it for a few minutes less than what the package says so it doesn't get mushy.  And it doesn't really reheat too well so you can't make a bunch of it and have it leftover.

I am not a huge bread person myself but I did find that Schar has a wonderful multi-grain bread. In terms of baking mix I like to use King Arthur. The baking mixes are amazing! I have found ways to make almost everything that I loved to eat gluten free. There has been a lot of trial and error but we Have it all pretty figured out. &#60;p&#62;She also has a lot of recipes for homemade condiments (mayo, ketchup) without sugar and a bunch of other stuff in them. &#60;/p&#62;
&#60;p&#62;I basically like to pair her recipes with some non-paleo things (like a lentil salad or just some plain cooked beans, or brown rice).&#60;/p&#62;
&#60;p&#62;And if you're gf I would buy a julienne peeler - you can make zucchini &#34;pasta&#34; with it and it's super good and super quick to cook up.

&#60;p&#62;Elana's recipes are usually very reliably good and she went paleo a few years ago on top of that, so that could be helpful.  She changed her diet for autoimmune issues, so that could be helpful.  The best GF flour mix I've used (that's not almond or nut based) is Pamela's baking mix, although I've heard a lot of great things about Thomas Keller's Cup 4 Cup mix.  These days there are so many GF mixes for cakes and cookies, plus so many GF formulated cereals (even mainstream ones) that it shouldn't be that hard if you're having a craving.  My celiac coworker tells me Against the Grain frozen bread and pizza products are her favorite.&#60;/p&#62;
&#60;p&#62;For all around healthier eating, something along the lines of a Whole30 diet may be helpful for you - it could give you a 30 day kickstart into that kind of clean eating and open up your eyes to a new normal.

<description>&#60;p&#62;DH has been GF for 3ish years. I know you said you don't want subs- but corn pasta is awesome! Brown/white rice/ potatoes are an easy side. We eat a lot of protein, veggie, carb dinners. Namaste gf flour is great to have on hand. I go through a Costco bag 1x a year but it's good for sauces/ very occasional baking.&#60;/p&#62;
&#60;p&#62;For breakfast Loco moco or breakfast bowls- hash browns, eggs, cheese, sour cream, avocado, Planck beans, salsa or chopped tomato.&#60;/p&#62;
&#60;p&#62;I can make any of the pioneer woman's recipes gf pretty easily.&#60;/p&#62;
&#60;p&#62;Also- Thai food, Chinese food, sushi and Mexican food are all gf friendly.

&#60;p&#62;I'm not GF but I recently cut out dairy. I'm a vegetarian but the whole dairy industry skeeves me out and was a big part of my diet, so I decided to get rid of it for the most part. (I will still eat local farm dairy, just not buying products from factory farms/hormones/yuck)&#60;/p&#62;
&#60;p&#62;Pinterest has been great! I have so many meal ideas that it's been really easy.&#60;br /&#62;
You can search using a few ingredients, throw in &#34;gluten free&#34; and it will turn up a dish that is gluten free that uses those ingredients.

<description>&#60;p&#62;So for a number of reasons, I've thought about going GF in the past (inconclusive celiac test and it runs in  my family, PCOS, general link of gluten to inflamation, IF and MCs). With a recent diagnosis of MTHFR and the need to avoid folic acid (which is in all enriched flour products in this country), I think it's time I take it seriously.&#60;/p&#62;
&#60;p&#62;But it's all so very overwhelming to me. DH has done about 90% of our meal planning and grocery shopping. He was recently told to limit carbs, so at least we're not as bread dependent as we used to be. But given that now it's my decision to go GF, I feel like I need to step up and do more meal planning instead of relying on him all the time. &#60;/p&#62;
&#60;p&#62;I don't want to simply replace processed carbs with processed GF products. I'd rather just try to eat healthier overall. &#60;/p&#62;
&#60;p&#62;Has anyone done this and found good blogs or resources that sort of help introduce you to the idea over time and ease in to it?&#60;/p&#62;
&#60;p&#62;Something with meal plans or recommended shopping lists would be really helpful. It's seriously been close to four years since I've taken ownership of this myself. &#60;/p&#62;
