I just counted, and we have 37 meals (which means both DH and I have dinner for more than a month), 2 chickens, 8 lbs of beef, 2 dozen fruit waffles and 8 dozen lactation cookies.

...

I think we're set ;)

Remember that you can make and freeze up lactation cookie dough ahead of time! I would highly recommend this for anyone wanting to BF! You can either make the dough and freeze it, or make the cookies and freeze them!

Its great to have snack foods.

Wow, those are beautiful pierogies! :D

LO was born in early summer so we didn't make a lot of freezer meals, but we did make a couple big batches of pesto sauce and spaghetti sauce (with and without meat). It was easy enough to thaw out a tub of sauce and cook up whatever sort of pasta we were in the mood for. Pesto is also good brushed on grilled or roasted veggies, and great in omlettes (great combo is pesto, goat cheese and shrimp).

Pizza dough is pretty easy to make, and makes for a quick and easy dinner.

@blackbird: Meatballs, enchiladas and chicken spaghetti are on our list too!

I'm also going to make a bunch of those clean all-in-one freezer crockpot meals from Pinterest...I think its Once a Month Mom who posts them. They are all basically meat, veggies, and seasonings, and you freeze it all together and just dump it in the crock pot the morning of.

omg pierogies!!!! Delish!!!! Here's what I made for freezer food:

Hawaiian meatballs, muffins, sausage/pepper/onion, white chicken enchiladas, thai curry, veggie burger patties, spaghetti sauce, chicken spaghetti, tamales, chicken noodle soup, and breakfast burritos.

Meatballs are REALLY easy! So were the enchiladas. We have lots of those! The tamales were time consuming, but damn, they are amazing.

Yum - all sounds delicious and those pierogi look fantastic!

I've been building my freezer food stash as well. So far I've made: black bean chili, beef stew, French toast casserole, and some muffins. My mum has made us two pans of lasagna and my stepmum will be contributing some homemade soups.

My mum's going to come visit on Friday and we'll try and get the rest of my list done. That list includes: meatballs, egg casserole, enchiladas, chicken and broccoli casserole, lactation cookies and green smoothies.

I'm doing the same thing! I made 10 bags of Couscous Lentil Curry last night, and I'm making a giant batch of Black Bean Burgers tonight. Tomorrow I'm making Enchiladas and Felafels to freeze as well.

I already have Stuffed Shells, Black Eyed Pea Stew, Peach Crisps, Black Bean Soup, Ravioli Soup, Italian Wedding Soup, Green Bean Casseroles, Sweet Potato Casseroles, Stir-Fry Mixes... I think that's it. Maybe a few other things buried in the chest freezer that I forgot I even made... lol

... By cooking!

We have been filling up our freezer with lots of yummy food to pull out once LO gets here. So far we've got chili, waffles, pasta bake, ravioli, meatloaf and turkey burgers.

Tonight was cheddar and potato pierogi. Our favorites!

I'm due in two weeks so there's still time for more - any freezer favorite recipes you have to share?
