&#60;p&#62;He also loves green beans from a can (easy!) and broccoli steamed in the microwave.

&#60;p&#62;I made some today with frozen chopped spinach, corn, peas, and broccoli.  I steamed all the veggies in the microwave, squeezed all the excess water out, rough chopped them in my food chopper with finely minced onion.  I used a heaping 1/3 cup of flour, salt and pepper, and garlic powder, plus 1/3 cup of shredded cheese cuz I had it on hand.  Pan fried them, drained on towels, let them cool completely and then cut them up with kitchen scissors into bite size pieces.  I thought they were tasty so I was curious to see what my picky-about-veggies 16 month old thought.&#60;/p&#62;
&#60;p&#62;He inhaled them for dinner tonight!  Chose them over the potstickers I was sure he would love and signed for more!  Total shocker!  The recipe made about 20 patties for me and I was able to freeze some for later.  I ate a few with Sriracha but I bet kiddos would love it with ketchup!

&#60;p&#62;For DS, we make him baby sushi to make all-in-one meals a lot.  We smash sticky brown rice with minced bits of everything - avocado, all kinds of soft steamed veggies, scrambled eggs, bits of meat.  When we're ready to eat, I top the mixture with a little mozzarella cheese and heat it up until the cheese melted.  Then we mix it all up so that the cheese can act as a glue.  We spread about a tablespoon of the mixture thinly out on pieces of toasted seaweed snacks, roll them up, and then cut them into little sushi bites with kitchen scissors.  I make one batch of rice mix that can last for a few days.  I just reheat with a little cheese on top each time I want to make it and roll up the little bites.  All I need to add is a little fruit and a cup of milk and its a complete meal for DS.

&#60;p&#62;Broccoli cheese bites:&#60;br /&#62;
16 oz. package of frozen chopped broccoli, thawed and drained of liquid (you can also use fresh broccoli.  I run it through the food processor just for a second to get a consistent texture.)&#60;br /&#62;
1 1/2 cup of grated cheddar cheese (or any cheese you like)&#60;br /&#62;
3 eggs&#60;br /&#62;
salt &#38;amp; pepper&#60;br /&#62;
1 cup of seasoned Italian breadcrumbs.  (I use crushed croutons or anything else I have on hand.)&#60;/p&#62;
&#60;p&#62;Preheat oven to 375.&#60;/p&#62;
&#60;p&#62;Mix all the ingredients together in a large bowl.&#60;/p&#62;
&#60;p&#62;With your hands, form small patties/nuggets and lay on a parchment lined baking sheet. (you can also use a silicone baking mat.  If you use foil instead grease it well because these guys stick!)&#60;br /&#62;
Bake in preheated oven for 15 minutes, flip, and continue baking until heated through and beginning to firm, 10 to 15 minutes more.&#60;/p&#62;
&#60;p&#62;That's it!

<description>&#60;p&#62;My daughter recently turned one and she loooves feeding herself.  Getting her to eat from a spoon is difficult at times because she just wants to do it herself.&#60;/p&#62;
&#60;p&#62;I'm looking for ideas on how to make her veggies that she can feed to herself aside from just steaming random veggies and cutting them up.  I do that as well (she loves peas) but was looking for ideas of other things I can make to ensure she gets her vegetables.  I've made broccoli nuggets and those were a hit.  Looking for other ideas similar to that.&#60;/p&#62;
