@runsyellowlites: It's super good! I actually sent the recipe to Mrs. Sunglasses and she blogged about it! My sister used it as my nephews first birthday cake and it was gorgeous. She also make it into cupcakes for Christmas. It's super yummy. and it does look great :)
The original recipe is from Healthy Indulgences: http://healthyindulgences.net/2009/05/healthy-chocolate-cake-with-a-secret/

Wacky cake with coconut whipped cream frosting is what we did. I also cut the sugar with applesauce which made it more dense but healthier (I didn't want him to have a lot of sugar$
). I have made it gluten free easily. It is almost allergy free that way.

@Mrs. Pen: Never heard of the healthy bean cake! As long as it looks pretty I'm totally a go for it. I'll definitely look into it! I have to use an egg replacer pretty much no matter what cake/icing choice I do.

I was going to suggest the healthy bean cake which is delicious - but she can't eat eggs either?! the cake has eggs in it... I'm sure you could use an egg replacer though!

Any other mspi moms start thinking about what to do for lo first birthday in regards to cake? I wish we had more option in bakeries but we don't where we live (I found a few gluten & dairy free bakeries up north).

I'm pretty sure I'll end up having to make it myself since P is also intolerant to egg whites and touchy with wheat. I guess I'm okay with that but I definitely don't have "beautiful cake" skills and that totally bums me out! Maybe I can do one with just icing between the layers & use food coloring to make the cake itself pink? Idk yet.

What are the other mspi moms doing?
