i just started to freeze meals, and have only done pasta sauce and soup. it's really convenient! i make a big batch of soup or sauce in the crockpot and then freeze enough for 2 peoples worth of meals in individual freezer ziploc bags(on recommendation from the lovely ladies on here). then pull the sauce out the morning of/night before to thaw and then just heat in a sauce pan or microwave. i want to do a lot more meals/sauces/soups for when LO#2 arrives in August, so we don't eat out as much as we did with #1

I am going to use this book. I haven't checked it out yet, but I'll see which ones I can "paleo-ize" and stock up as much as I can!

I baked and froze muffins (one-handed crack of dawn snack), banana bread, two soups, taco meat, the filling for breakfast burritos (sausage, red pepper and onion - just add to eggs and scramble), chili, spaghetti sauce/meatballs, and a turkey pot pie. I put everything I could in single meal servings in ziplocs, froze flat, and then stood up to store.

@rahlyrah: I freeze lots of meal "parts" like taco meat, chopped and seasoned chicken, meatballs that are easy to just thaw out and then make the rest of the meal fresh. I know post-partum I had frozen lasagna, frozen taco meat, frozen BBQ chicken, frozen meatballs, frozen fajita chicken, frozen homemade pizza rolls.

@rahlyrah: For the stuffed shells and things like that, I purposely cook them about fifteen minutes less than I normally would before I freeze them, and then when I reheat them in the oven they don't dry out.

@rahlyrah: I cook most of my meals before I freeze them, so I just reheat until hot! :P For soups and things like chili, I freeze them in ziplock bags so I typically defrost, dump it in a bowl, and microwave until hot.

@Arden: Ooohhh...great ideas! This may be a stupid question, but how do you know how long to reheat each meal? For example, if I froze chili, how would I know how to reheat it?

I know that once LO arrives, I am not going to feel up to cooking. I want to devote most of my time and energy to keeping baby alive and happy and somehow maintaining my own sanity.

That being said, I want to prepare for what will undoubtedly be the most overwhelming period of my entire life by preparing a bunch of freezer meals ahead of time. I've never frozen and then reheated a meal in my life, so I have no idea what tastes good once it's reheated from a frozen state. I know I want to make a lasagna, but other than that I am at a loss.

Any recommendations (and preferably recipes) for yummy freezer meals?
