@gingerbebe: Oh, no, haha! I was just saying it was salvageable :silly:

The sandwiches turned out awesome! I tried reheating in the crockpot but it was taking too long on low and I was afraid to turn it on high and toughen it so I transferred to a stock pot on the stove.

@daniellemybelle: your plan sounds fantastic. Sometimes if my roast seems tough its because I didn't cook it long enough. I'd totally put that meat back in the crock pot, completely covered in the gravy/juices and simmer baby!

@gingerbebe: I wouldn't say it is really dry and tough! But thanks for the serving suggestion - that sounds yummy :)

If the meat is really dry and tough, its going to be annoying trying to chew through slices of that that in a sandwich. I would change it up to make it more like a chopped/loose meat sandwich by chopping up the meat into bits, mixing it with your gravy or some BBQ sauce and maybe some onions or mushrooms if you have it, some cheese if you want it, and serve it up that way. That way the meat will be juicy/saucy and chopped up for easier eating.

@blackbird: Okay - probably overthinking.

@Pumpkin Pie: I was going to just use the "juice" (why does saying this gross me out so much?). I cooked the roast in a can of beef broth and a can of cream of mushroom soup with seasonings added so there is plenty of, er, liquid. I thought I might reduce it to make it a bit thicker and more flavorful?

What do you plan to use for the "dip", and how much juice do you have? If you have a lot of the juice, you can reheat in it so that its not so dry. If you don't have a lot, you can get a can of french onion soup, and use that as the juice/dip.

@blackbird: Can I just use the broth from the pot? So, what it is in now?

I'm not the best cook ever so please help me out!

Made a pot roast yesterday in the crock pot. It came out okay - a little dry. Leftovers in the fridge in the "gravy" right now. I want to make French dip sandwiches from it tonight.

How should I reheat? I don't want to dry it out more. Is it okay just to stick it back in the crock pot?
