@skipper2010 same as @petunia354, I've used that pioneer woman recipe for years and it's always a hit! If you don't want it as gooey I would use more cubed bread and pick a bread that isn't so soft but has more chewiness to it. So what I do is get a loaf of good French bread and a baguette. I cube it all and then fill my casserole dish so it's overflowing with the bread. So I always end up using more bread than the recipe calls for. Then I put it all in a gallon ziploc with the custard and let it sit all night and make sure to turn it over before heading to bed. The next day I spray my casserole dish and pour in the bread and the bread kind of shrinks from the liquid so it's never too much. Then top with the crumble mix and bake and it never overflows and it is so yummy! Not gooey which is how my family likes it

I use Smitten Kitchen's boozy French toast and sub vanilla/almond if it's for kids.

We made this one for Christmas morning and everyone loved it (I didn't do the topping because of nut allergies) but it was really good and not too sweet.

I use a pioneer woman recipe. The baking time is variable depending on how soggy or dry you prefer.

I use brioche and don't use the ginger. http://www.tablespoon.com/recipes/overnight-french-toast/dc9d4207-98ec-4858-b1d1-93a53c6b1a27

I really like this one:

10 cups (1 inch) cubed sturdy white bread

Cooking spray

1 (8 oz) block cream cheese, softened

8 large eggs

1 and ½ cups milk

2/3 cup half-and-half

½ cup maple syrup

½ t vanilla

2 T powdered sugar

1. Place bread cubes in a 13 x 9 inch dish coated with cooking spray.

2. Beat cream cheese at medium speed of mixer until smooth.

3. Add eggs, one at a time, missing well after each.

4. Add milk, half-and-half, maple syrup and vanilla. Mix until smooth.

5. Pour cream cheese mixture over bread. Cover and refrigerate overnight.

6. Preheat oven to 375.

7. Let casserole sit on counter for 30 minutes.

8. Bake for 50 minutes or until set, should be a nice golden brown.

9. Remove from oven, sprinkle with powdered sugar and serve with maple syrup.

Does anyone have an easy French toast casserole recipe that's easy and doesn't get too soggy/mushy? Need something yummy to bring to a brunch this weekend.
