@MrsBrewer: Tasted great! It reheated well. I might have to rethink the meat part of it because it discolored the eggs a little. But I ignored that and it tasted great!

Late to the party! :) I normally don't eat breakfast but because of gestational diabetes I had to start. My normal breakfast is half a tortilla, shredded cheese and Costco slice ham. I wake up split the tortilla, sprinkle the cheese on it and the ham... nuke it for 15-20 seconds and roll it up and go. :)

I'm not sure how these freeze, but they only take a few minutes. I think I ate one every morning while I was pregnant.

I use this microwave egg poacher, two egg whites, throw in the microwave for one minute. While that's cooking put a slice of cheese on a bagel and put it under the broiler until melted. Once the egg is done stack it all up and enjoy
Sometimes I'd put a slice of turkey, ham, or bacon on it, but not often.

So I made an attempt this evening... They look amazing, will update on taste tomorrow! I did one egg with one egg white, meat (bacon or sausage) and half a slice of cheese on top. I microwaved the eggs too so it was super easy!!

I haven't tried freezing them. But you can make them on Sunday and they last in the fridge for the whole week.

Muffin-top tins are the perfect size for eggs if you're putting them on English muffins! I have one with six very shallow circular indentations. I spray each with a bit of oil, crack an egg into each, break the yolk and swirl it a bit, add a sprinkle of salt and pepper, and bake at 325 until the centers are just set -- the eggs will cook a little more when you heat the sandwich, so you don't need to go overboard baking them.

I do a crustless quiche, baked in a 9 by 13 pan. Then I portion it out into servings for the week. It's very similar to the Spanish Omelet posted above. This week's version contains one potato, one onion, some cheese and a bunch of broccolini.

Oh, and don't limit yourself to breakfast foods at breakfast. If you can stomach it, try a chicken breast and vegetables.

I make breakfast burritos with scrambled eggs, sausage/bacon, cheddar, peppers and onions. I also add a little hot sauce. I pre make a bunch of them and freeze them in cling film or foil, and then heat them up in the microwave for 1 minute. They reheat really well!

Also, spanish omlettes freeze really well and you can cut them into slices before freezing to make them a quick on the go breakfast. I reheat them in the microwave for about 45 seconds. http://www.bbcgoodfood.com/recipes/2738/real-spanish-omelette

i've been doing breakfast sandwiches. I take an english muffin, split it. Scramble up eggs with sausage and pour them into a measuring cup with some spray (the size of the cup is approximately as round as the english muffin). microwave for 1.5 minutes, dump onto a place, stick a slice of cheese on top, and let cool. Then stick between the bread slices. I make 5 and take them to work and am set all week.

I'm not a burrito fan but do make these breakfast sandwiches, and they are really good!

Make egg whites (or eggs) in muffin tin, bake for 20 minutes ( I add spinach, peppers, onion for some added veggies)

Cut English muffins in 1/2, and add 1/2 slice of cheese (I like white cheddar) and either Canadian bacon, turkey slice, or I've done the microwave bacon. Add egg when done and wrap up individually in plastic and place in freezer Ziploc bag. To make in morning unwrap, and stick in paper towel, microwave for 1-2 minutes!

Not make at home, but I bought some sausage croissant breakfast sandwiches from Costco and they have been easy to re-heat in the mornings.

I don't like burritos so the next warm breakfast food would be oatmeal.

I try to have oatmeal with egg whites (added protein) for breakfast most weekday mornings. Once last week and now today I haven't been able to finish it. Just not a fan right now. So I want to try making some sort of breakfast sandwich or burrito at home that I can freeze and reheat. Anyone have any recipes? I'm not a veggie person but fine putting meat in them (bacon, sausage), cheese, potatoes, whatever else!
