<description>&#60;p&#62;I only liked gas when we bought a gas oven to replace our electric one that died.  Everything cooks more easily and accurately now.  My parents had a gas oven for years before I did and I don't like theirs as much as I like ours - so it could be a make/model difference.

<description>&#60;p&#62;@Tanjowen: You can have someone come and adjust how much gas is emitted from the burners (I'm sure there is a technical name for this, but I don't know it!). We had to do that at our house - like you described, even on low stuff was boiling away vs. simmering nicely. Once we had it adjusted, cooking was much smoother.

I should probably remove everything and take a look at what is going on. I cooked chicken tonight and even after turning it down to almost low,  came back to it boiling and got popped with some grease,  ugh.

&#60;p&#62;@Tanjowen: You mentioned &#34;flare ups&#34; in your post.  Are you having issues?  I often get flare ups after the stove is cleaned because it's hard to get the pieces that regulate the flame back on just right.  I've also read that blockages can cause flare ups.  Outside of that and spilling over you shouldn't be getting a lot of unpredictable flames.

I'm still getting used to the different heats on the four burners, though, and which pots to use with which.  I've definitely had more than my share of spillovers.  ;)
