@Raindrop: wow. Game changer. I'll try anything!

@stratosphere: that sounds delicious. I'm glad I have summer produce to look forward to this pregnancy!

@jojepie: I noticed a difference with exercise after eating, too. Unfortunately, she was a winter baby and it was hard to get motivated to move for a brisk walk when it was cold and dark. Maybe I'll be more motivated now that it's warming up.

@Happygal: I was told this by someone.. Dang I can't remember. Basically it's about servings. So have 2 servings of protein with every 1 serving of a carb.

So like 2 eggs (1 egg = one serving) for every piece of bread (1 slice of bread = one serving) you eat.

That totally worked for me. I could eat as much as I wanted and whatever I wanted, as long as I did the 2 proteins to 1 carb rule.

Well except for pizza and rice... for some reason I could pile whatever on pizza and it still spiked me and rice... I could have 2 bites of rice and it ton of meat and veggies and still spiked!! Grrr.

Still waiting to see if I have GD this time, but last time I think I had a caprese salad for dinner every night for the last six weeks of pregnancy! If you live in an area with a good tomato season, it is heavenly! I'd use a pint or two of cherry tomatoes cut in half (key to a great flavor!), a tub of mozzarella bocconcini (little fresh mozzarella balls in water) with each little ball of cheese also cut in half, and a big bunch of fresh basil chopped into ribbons, all tossed in a big bowl with olive oil and balsamic vinegar. Heaven.

Funny thing is that my LO goes crazy for caprese salad even as an opinionated 20-month-old. She was programmed in the womb to love it!

Snacks: wheat thins with low fat cheese like babybel, various types of unsalted nuts, popcorn without butter, low sugar yogurt with granola or small amounts of fruit

I usually walked for 20 minutes after my meals so that gave me flexibility in eating more carbs. I found it easier to add exercise rather than severely limit my carb intake.

@tinyperson: I kept a food log, so I need to check that out to remind myself of what I could handle. Berries and beans were not so good for me. It got harder as my pregnancy progressed. Bunless burgers are a great idea!

@Happygal: plain Greek yogurt with berries has been my breakfast every morning. I can usually add a latte without spiking, so clearly I handle dairy carbs well. I've been buying stuffed chicken and cooking that for myself, and bunless burgers have been working out. Eating out, I've got a burrito place where I can get my burrito bowl with a small scoop of rice and beans and lots of veggies and that seems to work for me!

@Raindrop: what's the "2 protein, 1 carb" rule? It's sounding self-explanatory, but I didn't hear about it last go round!

Bumping for inspiration! I mainly edited dinner meals I made for us and ate the same, boring things on repeat for breakfast and lunch. Looks like I'm back to GD land at 19 weeks, so I'm going to put a bit more effort into meal planning. Any good links to recipes or blogs?

Chicken and roasted or stir fried veggies with brown or black rice, I actually like black rice, it has a nice texture and I usually splash a bit or hot sauce on it.

Taco salad. Or a taco with salad as we need the carbs anyway. I usually cut up avocados, tomatoes, peppers, and sometimes cauliflower or broccoli for the salad.

Pulled pork is good. Use a spice rub before it goes in the crock pot and then you can skip the bbq sauce. Have it on half a bun with veggies.

I'm going to try a variation of Loco moco, but haven't made it yet. It's a burger patty with a fried egg and rice covered in gravy. Going to try it with brown rice and see if it works. Have to see if I can find a gd friendly gravy or alternative. As well as something to replace the egg for me as I have a sensitivity to them.

Oh and chicken gyros on whole wheat pita!

I usually ate anything I wanted with the 2 protein to 1 carb rule.

My usual go to breakfast on the go was a tortilla, slice cheese and slice ham roll up. Ate on the way to work (I'm always running late in the morning).

Normally some sort of meat based salad (salmon or chicken) for lunch or a hamburger without the top bun.

Dinner was whatever with the 2:1 rule.

Snacks were usually nuts or protein bars (I loved Luna bars).

I was able to keep my GD numbers down with just diet.

Big food that were big no-nos for me was pizza. I couldn't make pizza work for me even thin crust with pails of meat... still got a pretty bad number. I think my GD nurse said there is a lot of sugar in the crust *and* the sauce.

Edit - I never did this because I'm lazy but I heard briskly walking for 10 minutes helps with numbers.

We had this for dinner tonight, not sure if its GD approved, since I think the tomatoes add a bunch of carbs, but check it out:

I'll admit, I have not been good with my GD diet. Luckily, up until this point I could eat whatever and my numbers would be ok. I'm almost 13 weeks and I can see my numbers rising with meals. Plus I go back to work next week so I am looking for peoples recipes and meal ideas! I need to start taking this diet very seriously, now that the baby/placenta is producing insulin.

Share away!
