&#60;p&#62;@locavore_mama:  DH could definitely help prep, but I deal with some kitchen control issues :( he tends to make a mess which stresses me out more than just spending the time cooking. This is something I am working to let go of because I could really use his help :)&#60;/p&#62;
&#60;p&#62;Our &#34;easy dishes&#34; have usually been turkey chili (about 25 minutes total until it's on the table, grilling some chicken with salad and microwaved &#34;baked&#34; sweet potatoes, and spaghetti with (turkey) meat sauce. I am excited to expand this rather boring repertoire.

&#60;p&#62;A really easy one I do is a one pot meal. I take boneless skinless chicken breast and sear it in a oven safe pot wiht evooo and garlic. Then remove the chicken. Throw in whatever veggies I have, s&#38;amp;p, garlic salt, then some stock, orzo, and put the chicken back in. On top I throw some leafy greens. Throw in a 350 oven for 20 minutes. I can get this meal done in about 40 minutes.&#60;/p&#62;
&#60;p&#62;Can your DH be doing food prep while you're putting LO down?&#60;/p&#62;
&#60;p&#62;DH works till 9 three nights a week. So I'm doing everything solo and making dinner for DH &#38;amp; I when she goes to bed at8. I do dinner prep for us while she's eating. THen cook after she goes to bed.

<description>&#60;p&#62;We boil water, cook whole wheat pasta, throw a bag of spinach in in the last few seconds, and toss with jarred sauce. We usually also cook up some of those chicken sausages to go with it. We have a ton. A ton. Of frozen pesto, so we do it with that.&#60;/p&#62;
&#60;p&#62;Another go to is bean tacos. Sauté onions, garlic, and a jalapeño. Add 2 cans black beans, 1 can fire roasted diced tomatoes, and spices (cumin, chili powder, salt). We have these with whole wheat tortillas.&#60;/p&#62;
&#60;p&#62;Both these meals are cheap and quick.

<description>&#60;p&#62;I am struggling a bit with dinner inspiration.  As soon as I get home (~6:00pm), we feed LO his dinner, have bath time, nurse, story time and usually right down to sleep.  It is usually about 7:30 at this time and I am too exhausted to make a meal of any substance!&#60;/p&#62;
&#60;p&#62;I used to try to cook large meals on the weekends but that has also pretty much gone out the window.  I would love some inspiration on good, easy weeknight meals that can either be prepared in advance or cooked quickly (with minimum prep work) in the evenings.&#60;/p&#62;
&#60;p&#62;Please help save my sanity (and my diet!)!
