@LittleGBee: Do you know if she made the tortillas or bought them?

@Pirouette: We don't often have those available in the stores here. I live in a teeny tiny town with the nearest major town an hour and a half out.

@brownie: A friend of mine made me frozen burritos with GF tortillas, refried beans, grilled fajita veggies, spinach, and some guac. She wrapped them individually and gave me heating instructions. (Microwave for 1.5-2min with a wet paper towel) Honestly, it was one of the most thoughtful "meals" that I received. Super labor intensive for her, but really convenient for me as I learned to juggle lunchtime solo with two kids under two.

I mostly eat some sort of quinoa salad for lunch. I make a batch at the beginning of the week, and I add the fresh ingredients (like goat cheese, lettuce, herbs, etc) as the week goes on so they're not soggy.

I've found a lot of rice pasta to not keep super well, but I love corn pasta! All of my gluten eating friends can't even tell that it's not wheat based.

Amy's makes some gluten free microwave meals and I think some are dairy free too. They also make good veggie burgers. There's a brand of frozen burritos at whole foods that's gluten free but I don't know the brand. I like making pureed soups and freezing them - all gf and dairy free! Like butternut squash or carrot ginger. Whole foods also sells frozen precooked rice and I think quinoa, you could buy some of those and frozen veggies. And maybe some frozen precooked shrimp?

Not frozen but how about some tomato sauce and gluten free pasta? That's always a fast meal...

@Mrs.Someone: @LittleGBee: Any ideas for quick foods like hot pockets that they could just grab and microwave?

You're super sweet for watching her daughter and wanting to provide food! I would look for Paleo compliant meals. I'm already gluten free and just eliminated dairy and I'm excited to try these recipes out. (http://hollywouldifshecould.net/2012/12/5-make-ahead-whole-30-meals/) It seems like they would freeze well!

Tons of options here: http://onceamonthmeals.com/menus/paleo/ . Anything labeled Paleo should be OK I think.

My friend is in the hospital for kidney stones (at 23 weeks pregnant). We are watching her daughter for them. I would like to make a few things that are easy for them to heat up and eat when they get back from the hospital (at some point in the future as there is no eta). She is gluten free and dairy free.
