@BunnyDragon: FWIW, our tamari is labeled both as tamari and soy sauce (it's San-J's GF product) so I think they're interchangeable in terms of how you use them.

Btw, when using tamari, should it be equal to the amount of soy sauce? I have never used tamari before.

Thank you ladies for your suggestions. I think I will make a batch of homemade marinade to be safe. I am stressing about one meal and this guy has to careful about everything he eats. So sad. He brings his own food to parties and such, but I want him to be able to eat some korean food. Cuz you all know, korean food is such a treat! :-)

@Freckles: my comment was with respect to all the comments that soy sauce was a no no - which would be good for the OP to know if she was making her own marinade as suggested.

I was not commenting on using a pre-made marinade that has soy sauce in it.

For what it is worth I am celiac and I wouldn't buy a pre made marinade with "soy sauce" listed as an ingredient unless the product specifically stated it was gluten free.

@MrsH: The OP said that she was buying premade galbi marinade. Can she guarantee that the soy sauce in the marinade is wheat-free? Naturally-fermented soy sauce meet the standards to be qualified as gluten-free (or close to it), and Kikkoman offers it. If i were preparing something for a celiac friend, i would not buy a prepared marinade where i can't account for the ingredients. That's just me.

I disagree with PP while lots of soy sauces have gluten/wheat in them. There are now soy sauces available that are glutenfree. Even Kikkoman who uses wheat in their bottled soy sauce just came out with glutenfree packets of soy sauce.

Make sure to carefully check anything you buy pre-packaged. Soy sauce is a no-no, but Tamari and Shoyu are fine.

To add on to @Freckles: there's a pancake that's made of mung bean. I can't think of the name.

But I think your original choices are excellent. Just substitute with Tamari. It could be a great time to play with a homemade marinade.

The store bought marinade will have soy sauce in it, which has gluten. Could you make the marinade at home? When you make japchae (great gluten-free option), use tamari instead.

How about pajeon? This girl (http://chowdivine.com/pajeon-korean-zucchini-scallion-pancakes) used brown rice flour and glutinous rice flour.

DH is having his friends over next month for poker and we will be serving Korean food. One of his friends has a gluten and egg allergy and I want to make sure he can eat something. We plan to make kalbi (with store bought jar marinade) and jap chae. Will those be ok or should I make him something else? Can you name some Korean food that are gluten free?
