&#60;p&#62;Over southwestern quinoa salad (quinoa, black beans, cilantro, jalapeño, avocado, scallions and sweet red pepper)&#60;/p&#62;
&#60;p&#62;Over Greek winterberry or quinoa salad: base grain + Greek olives, pepperoncini, red onion, feta (could omit), garbanzo beans. &#60;/p&#62;
&#60;p&#62;Winterberry salad with pumpkin seeds, pistachio, scallions, goat cheese (can omit), golden raisins. &#60;/p&#62;
&#60;p&#62;You can add some shredded romaine under either to mix it up and add some crunch.

<description>&#60;p&#62;I grilled 4 pounds of chicken breast.  I want to use it for lunches for the week. Trying to come up with some creative ways to eat it so I don't get bored. I plan to do chicken with coconut rice and maybe a chicken taco. I guess I could do a salad. What else would you do with pre cooked grilled chicken. &#60;/p&#62;
