<description>&#60;p&#62;I make and can applesauce each year. I never add sugar or lemon and I have no problems with spoilage. I highly recommend Swiss Gourmet apples for sauce and pies (they are ripe now in the Northeast, but they'll keep for a couple months in cold storage). Cameos are also nice for sauce. If you're unsure which variety to use, try using several for a balanced flavor. Also, any decent apple growers should be able to recommend a good variety for sauce that's ripe at their farm at the time you go picking.

<description>&#60;p&#62;Yup! You add a tad of lemon juice and peel to it which helps with browning. As long as you're processing them and it's airtight, browning won't be a problem.&#60;/p&#62;
&#60;p&#62;Smitten kitchen has a recipe for babies which doesn't use sugar that I like.&#60;/p&#62;
&#60;p&#62;I always think I make enough to last the winter and it's gone before fall even ends! LOL&#60;/p&#62;
&#60;p&#62;P.S. If you've never canned before it wouldn't hurt to read up a bit on the process. It's important to hear the pop when the jars are sitting on the counter. That's how you know it's sealed.
