It is just beautiful. We did an REI trip where you hike, bike or kayak each day, and without kids, so a fairly specific experience, but we generally found it to be a great place to travel, tourist-friendly, great food and drink, and relatively inexpensive. We started in Zagreb and made our way down to Plitvice, Novigrad, Skradin, Trogir, Ljubuski (in Bosnia), and then Dubrovnik. Zagreb was miss-able, but we loved Plitvice, Novigrad, and really every other place we stopped. If I had to pick one spot though, it would certainly be Dubrovnik.
