Make sure to leave LOTS of head room for overflowing and foaming.

Seconding the peanut oil. Have the lid to whatever pan/pot you are using in case things get a little out of hand.

It's not hard, don't worry! Keep kids back due to splatters and make sure your oil doesn't spill on the flame. Other than that it's all pretty easy. Good luck!

keep any water away from the hot oil - even freshly washed hands that drip a drop into it can make it splatter like crazy and make sure its deep enough in the pan. Also, I agree keep your kids/dog away from stove and your feet.

Use peanut oil. Make sure it's hot enough, and drop a little batter in before the food to test how quickly it's going to brown. It's not hard, and honestly, it's difficult to make fried food taste terrible. :)

I use my Lecruset when I fry things...make sure the oil gets very, very hot and the kiddos are nowhere around (just in case).

What are you frying up??

Don't stress, it's easy! Just make sure you have enough oil on hand and that you pay attention to the heat.

Use a deep pan, drop a little crumb of whatever you're making into the oil first to test if its hot enough, adjust heat as needed while cooking so the oil doesn't get too hot and just burn everything up; don't stand over the oil - it will splatter some and can burn!

I've never fried anything because I've never needed to but DH has requested his favorite food for NYE which is fried.

So I'm intimidated by frying food. I don't want my house to burst into flames. Does anyone have any tips?
