@banana: I'm intrigued! :-) Does the fermenting process take out the lactose?

@scg00387: Try it! It's really easy once the grains are activated. You just have to remember to strain them every 1-2 days. You'll need a plastic strainer because you cant use steel. And some glass jars. Go for it!! Yogurt was way harder to make for me, too.

I haven't. I've wanted to, but I buy locally produced kefir from the farmer's market and even get a rebate for returning the jars....it makes it too easy for me not to have to make my own! I'd really like to try it though.

@SAHM0811: My son totally drinks it and loves it! I make everything out of it. You can totally add flavor to it. I make kefir smoothies all the time with frozen/fresh fruit. I also use it to make curry, pancakes, salad dressing, soup, spinach dip, cupcakes. Anything that calls for buttermilk, yogurt, sour cream, mayonaisse or milk. My mom uses it to wash her hair and face cause we have tons of it in the fridge!

My DH is lactose intolerant so he drinks this stuff like water.

@banana: oh cool! sounds so easy!! do your LO's drink it? what else do you use it for? you could probably add flavor to it too, right? I've bought strawberry kefir for DDs before and that's what they like!

@SAHM0811: I made yogurt at home before and making kefir is a lot less labor intensive I think. Literally, you put the kefir grains in milk, cover and leave it in room temperature for 24 hours. Next day, you have kefir! Then you strain the grains and pour milk again. 24 hours later, more kefir! You just have to remember to strain the grains every 24-48 hours. Or you can dry them and reuse them later.

@chopsuey119: Kefir is fermented milk, like yogurt! But it's more watery (like buttermilk consistency). Yeah, some restaurants make rice pudding with it! It's yummy! I made curry with it. I think you can make anything that calls for milk with it. Not sure about Indian rice pudding though.

@banana: interesting! i'd definitely look into this. i've wanted to make my own yogurt at home, but have never got around to it... but it sounds like a similar process?

@regberadaisy: Yes! They totally reproduce! I started off with a tiny bit of grains and now I have like a handful of grains! Seriously, it's like having a mini pet.

She bought the grain packet here: http://www.culturesforhealth.com/

She 'activated" them and they started reproducing like crazy. So she gave some to me. And then mine started reproducing too! I have pitchers of kefir in my fridge. I've been making smoothies and freezing them in reusable pouches. I feel like I have little kefir culture pets. You have to "feed" them everyday with fresh milk. hehe

My friend shared a few kefir grains with me and I've been making kefir every day! It's so easy to make. My kefir grains are multiplying so I've been asking around if anybody wanted some grains. Not takers so far. =\
